One thing we like to do for our Chickens is fermenting their feed. Todays Video shows how we (usually Petra) do it. It is easy and quickly done after you got into a routine. In the Video, Petra mentions some extras, like Kelp, what we like to mix into the fermented Grain to ensure a complete balanced feed.

Here is some extra info, not mentioned in the Video:

Kelp:
- Kelp Meal is made from dried ocean seaweed that is then ground up. A valuable supplement that provides vitamins, minerals, amino acids and carbohydrates that in general, improve the overall health of chickens
- Vitamins include A, B1, B6, (NIACIN), B9 (Folate), B12, D, E, and K. Also iron, iodine and Calcium.
It also includes important trace minerals–phosphorus, zinc, copper, manganese and selenium as well as lower levels of leucine, lysine, phenylalanine, tyrosine and histidine.

Fermenting:
Lacto fermentation is an anaerobic process that preserves and enhances food. Lacto fermented food contains live Lactobacillus, a beneficial bacteria that helps normalize the acidity in the stomach, provides digestive balance, aids in the absorption of nutrients, neutralizes toxic compounds, and strengthen overall immunity. When it comes to chickens, fermented feed has been found to increase egg weight, shell weight and shell thickness; boost the chickens intestinal health by forming a natural barrier to acid-sensitive pathogens like E. coli and Salmonella; and lowered their consumption of feed. Not only does fermentation preserve the vitamins in your grains, it also creates new vitamins, primarily B vitamins like folic acid, riboflavin, niacin, and thiamin. The higher quality your feed, the more your chickens will gain from lacto fermentation. You can ferment your current feed, might it be crumbles, pellets, scratch, cracked or whole grains and seed.

Planting under Spruce Trees is always a Challenge due to the Acidic Soil and Shade from the Trees. What to do with such and Area?

This week we have a Video for you that we actually filmed end of September last year. Mike talks about what our plans are for the property and shows some Chainsaw work by cutting some trees.

Our Wood Fired Pizza Oven slowly takes shape and looks already somewhat like a "to be Oven". The Fire Bricks are in place and the Refractory Mortar needs to cure, before we can finish filling the gaps.
We hope that our DIY Pizza Oven project inspires you to build one for yourself so you can enjoy many different meals - not just Pizza - or bake awesome crusty bread.

This week we talk about our newest Project. Indoor Gardening during Winter with sub-irrigated Planters also called Wicking Bed.
Sub-irrigation is the process of watering plants from below, instead of above. The sub-irrigated planter works when you pour water into the fill tube and it flows down into a chamber of
pipes below the soil. Once the chamber is full, the water wicks up through the soil and seeps into
plants’ roots. This system helps to keep soil consistently moist so you won’t have to water as often. Evaporation is very little to not existent, less watering means less Water used, less time spent watering. Which also means you can go for a trip or vacation without worrying about your precious plants 😉

After the foundation is finished, we finally can start building the base for the Oven from Cinder Blocks and to secure them in place we used PL Premium Polyurethane Construction Adhesive. In this Video, Petra is building a Flow Through Vermicomposting Bin, to be used indoors during the Winter. After experimenting with different styles of bins, she decided that the wood build frames, which stack on each other, is the best and easiest way to produce wonderful fertilizer for the Garden by using Red Wiggler Worms (Eisenia fetida), which do all the work by eating kitchen scraps and turning waste into useful "Black Gold". Build it any size you like, add as many frames as you like and adjust to your specific needs. Saving horizontal space due to the vertical build.

Watch us build a Wood Fired Pizza Oven for the backyard / garden. This is the first time we have ever built a pizza oven and we used cinder blocks for the base of the oven on top of a concrete foundation. For the burning chamber we used fire bricks. Covered the entire exterior of the dome with Sairset 3000 Refractory Mortar.

Have you ever had fresh Mozzarella? I am not talking about the brick style Mozzarella you can buy in the Grocery Store and grate to top your Pizza. I am talking the fresh white soft Italian Mozzarella that you can make and eat right away. Traditional the Mozzarella is made from Buffalo Milk, but since we don't have any here in Canada we use Jersey Milk.

In this instructional video, Petra shows you how to make Quick Mozzarella in minutes, using the Water Bath method. So you are able to create a traditional Italian Caprese Salad the same day or a delicious Pizza, just minutes after you made your Mozzarella. There will be another Video on the Salad and how we bake Pizza in a Wood Fired Oven fairly soon.

Ingredients used:
• 4 Liter of Organic whole Jersey Milk (non Homogenized, non Ultra Pasteurized)
• 1 1/2 Tsp Citric Acid dissolved in 1 cup / 250 ml cold – non chlorinated Water
• 1/4 Tsp single strength Rennet mixed into 1/4 cup / 60 ml cold – non chlorinated Water
• 1/4 cup Sea Salt

Equipment needed:
• Stainless Steel Pot, or Steamer Pan – if you use the Steamer Pan you will need a set up with a Water Bath and a Sous Vide.
• Curd Knife
• Slotted Spoon
• Measuring Spoons
• Ladle
• Measuring Cups
• Thermometer
• Timer

For the Stretching:
• A Pot to heat the Water (4 Liter) or the Whey if you decide to use it.
• A Bowl of Ice Water
• A Handheld Strainer
• A Spoon
