The Serbian Saint Nikolai of Zica (1956+) is one of the most revered saints of the Eastern Orthodox Church of the 20th Century.

From one of Saint Nikolai's sermons:

"All evil deeds are cursed, and everyone who does evil deeds puts a curse on himself and his children. He who fears God and glorifies God and trusts in God receives a hundredfold blessing, and the blessing does not depart from him, nor from his kindred, nor from his hearth, nor from his labor, nor from his cattle, nor from his field, nor from his labor.

It is better to be glorified than ashamed and better to be blessed than cursed, just as life is better than death and health is better than disease and light is better than darkness. May God glorify you all with his glory and bless you with his blessing, all of you who have gathered today for glory and prayer in this wonderful sanctuary of yours and the sanctuary of your fathers.

It was too hot to walk to Dutch Bros with Mimi the Memes today so we made our own puppaccino with whipped cream and doggie treat beef topping! Doggie approved! 🐶

Peel & slice 15 potatoes 1/8 inch thick
Oil large turkey pan
Place first layer of potatoes in pan. Do not overlap.
Drizzle heavy cream over potatoes.
Salt, pepper.
Stack next row and repeat: cream, salt, pepper.
After row 4, top with grated cheddar cheese.
Add row 5 on top, then cream, salt, pepper.
After row 7, spread ricotta cheese.
Finish layering rows 8 through 11: cream, salt, pepper.

Bake at 375F, covered in tin foil for 45 mins to 1 hour.
Uncover and bake for another 30 to 45 minutes.

Make caramelized onions. Cut large onion in half and slice onion strips. Cook in butter & a pinch of sugar over low-medium heat, stirring every 5 minutes, until desired brownness & texture. About an hour, up to 75 minutes.

Just substitute protein powder for flour and reduce the amount of sugar. I reduced from 3/4 cup sugar to 1/4 cup but you could probably leave it out completely.

I’m making my first cake. Here is the glaze. We’ll see how everything turns out. Stay tuned!

Start with 75 g all purpose flour, 75 g water. Stir. Close lid. Keep in 70-75 degree F location.
You don't need to add yeast, but I've seen recipes that do. It will ferment without the yeast.
Feed once or twice a day with same amounts. Stir. Close lid.
After 5 days your starter should be ready to incorporate into a sourdough bread recipe.

Apparently I inadvertently cooked it upside down, but that made the breast extra juicy. A happy accident! Watch doggo make a sneak appearance at 7:14 when I am taste testing the gravy!

Try these this Christmas! There are many good recipes out there. These are literally drenched in honey and the cooked honey sauce. They are addictive!

The only thing I didn’t have when I made this was the pizza stone, which I am sure makes a big difference! I have one now. I’ll try again! This bread is amazing.

3 cups almonds
1 cup walnuts
Roast on cookie sheet at 350 F for 8-10 minutes
Add to food processor & process on high for 3 minutes
Scrape down sides
Repeat until mixture becomes oily (process 3 minutes; scrape down sides). Be patient! This may take 15 minutes.
Add salt, nutmeg, and cinnamon.
Process for 1 minute.
Pour into jar.
Enjoy!

Eastern Orthodox Christianity. This is the Akathist to Guardian Angel chanted.

The complete Jesus Prayer is “Lord Jesus Christ, Son of God, have mercy upon me, a sinner.” But you can shorten it to simply, “Lord have mercy,” or “Jesus Christ, have mercy upon me.” There are many variations. You may notice that on the very last one, I shortened it.

The Eastern Orthodox “Hail Mary” is: “O Theotokos and Virgin rejoice, Mary full of grace, the Lord is with Thee, Blessed art Thou among women, and blessed is the fruit of Thy womb, for thou hast borne the Savior of our souls.”
