I have been nagging Emma for some time now to put up a few videos about homesteading and the sustainable lifestyle. Well my nagging has paid off and Emma has published some new videos!

It would be great if you could see fit to subscribe, comment and share the videos to give Emma and her family the recognition they so richly deserve.

Doing an Emma has been a thing for me since I returned from my visit with the Baird family at their lovely homestead in beautiful Nova Scotia in September 2019.

Emma Baird is a fantastic cook with a flair for using wild edibles and thrift to make affordable, delicious and nutritious meals for her family. I went there to learn and learn I did, and now I have adopted Emma's techniques and flair to make my own thrifty, tasty and healthy meals for my brother Richard and I.

Lunenburg Part 2 of 2 has a very nautical theme, starting with a slap up seafood meal in the Old Fish Factory restaurant, followed by a look around the museum and a stroll along the dock to see the beautiful schooner Bluenose II which famously appears on the Canadian dime coin. Also at berth were the vessels Cape Sable and Theresa E. Connor.

We wind-up the trip with a short walk to the Ironworks Distillery. A great day was had by all!

This video finds the Baird family and myself in preparation for the imminent arrival of Hurricane Dorian.

In expectation of loss of power and running water, we prepare a lot of food, including a crock pot stew made with wild hare, garden grown vegetables and wild herbs. Baked items were Scottish-style oatcakes, water biscuits, banana and walnut cake and wonderful home-baked bread.

Lance and Elijah were busy for most of the day shoring up the barn, which was under threat of being undermined by water run off.

This series of videos finds me in Nova Scotia province in Canada enjoying the warm hospitality of the Baird family.

Lance and Emma Baird have carved out a great life for themselves and their children in rural Nova Scotia, living the sustainable way; hunting, fishing and foraging for wild foods.

These lovely people have found happiness and fulfilment in their lives, and I have had the great privilege to share two weeks with them in their beautiful homestead.

Stay tuned for more videos in the series.

Lance and Emma Baird have carved out a great life for themselves and their children in rural Nova Scotia, living the sustainable way; hunting, fishing and foraging for wild foods.

Pork and apples are a match made in foodie heaven!

Combined with the delicious concentrated flavour of roasted vegetables, this makes for a quick, easy and delicious meal you can bake in the oven.

A flinty dry and crisp white wine like a Pinot Grigio or a good Chablis will bring out the sweetness of this delicious pork, apple and vegetable bake.

Italian Ariosto per Carni is my seasoning of choice for this dish, but you can use your favourite pork roasting rub if you prefer.

I love chicken wings any way I can get them, but this quick and easy recipe uses bottled Buffalo wing sauce.

I was most pleasantly surprised by how good they turned out. Oven baking tends to dry the wings out much less than cooking them on the BBQ grill.

Beggar's Chicken is a classic signature dish from the Jiangsu province in China.

I first had this wonderful dish as part of a huge gourmet-level Chinese banquet in Kowloon, Hong Kong many years ago. All the diners were presented with a little symbolic brass hammer as a memento of the occasion.
