Lamb and spinach curry was introduced to me when I was about 21 years of age, and it has been a firm favourite of mine ever since. I made a point of learning how to cook this delicious curry, and I have been perfecting my recipe over many years.

This wonderful dish is known as saag gosht or palak gosht on the Indian subcontinent and also among the diaspora from that immense region now living elsewhere in the world.

Saag gosht/palak gosht combines the sweet succulence of lamb with the many health benefits of spinach, in a way that delights the palate and really satisfies.

You can substitute shoulder of mutton or venison for the lamb in this recipe, adjusting the simmering time until the meat is tender.

If you have never tried saag gosht, I highly recommend you do!

Steak and ale pot pies are extremely popular in the UK pub grub scene, and deservedly so because they are a delicious and hearty dish that goes down just great with a pint of your favourite beer.

In this recipe I use a British brown ale, which is a sweet and malty flavoured beer without too much bitterness from hops.

Roast beef with Yorkshire pudding is the signature dish of the British. The French have a nickname for the British, 'Les Rosbif', which just about says it all!

To roast the beef:

Allow the joint to sit at room temperature for 1 hour before roasting.

Place the joint in a roasting tin on top of 2 halves of an onion. The onion will caramelise as the beef cooks, adding colour and flavour to the gravy.

Season the joint with mustard, salt and pepper.

Place the meat on a tray in the centre of the oven.

For rare roast beef:

Roast for 15 minutes for each 450g/1Lb

20 mins at 240°C/475°F/gas mark 9

Turn the oven down to 190°C/375°F/gas mark 5 for the rest of the roasting time

Add 15 minutes to the total roasting time for medium rare and 30 minutes for well done.

Allow the joint to rest at room temperature for 30 minutes before carving.

Leave the oven running at 190°C/375°F/gas mark 5 for the Yorkshire puddings.

Yorkshire puddings:

1 cup plain/all purpose flour
1 cup of eggs
1 cup of milk
Pinch of salt

Mix well and allow to stand for 15 minutes.

Pre-heat muffin tins to 190°C/375°F/gas mark 5.

Add a teaspoon full of fat/lard/cooking oil to each muffin tin well.

Half fill each muffin tin well with batter.

Bake at 190°C/375°F/gas mark 5 for 10-15 minutes, but keep an eye on things to avoid burning them. The Yorkshires will rise dramatically as they bake!

If you need to open the oven to check progress be careful. Do not slam the oven door, it may collapse the Yorkshires!

Add the prepared potatoes to the roasting tin for the last 30-40 minutes of roasting time.

Stir fry pork with pickled mustard greens is a popular dish all over South East Asia, it combines the sweetness of pork and bell peppers with the salty-sour tang of pickled mustard greens to create a delicious pro-biotic meal.

Recipe

Marinate:
450g/1Lb of pork, finely sliced (or turkey thigh meat)
Half tsp freshly ground black pepper
Tbsp fish sauce

Marinate for 2 hours

Prepare:
2 tbsp oil for stir-frying
Half a brown onion, chopped
6 cloves of garlic, finely chopped
2 sweet bell peppers, chopped
Tbsp soy sauce
Half tbsp fish sauce
300g/10.5oz pack of pickled mustard greens, finely chopped and rinsed

Method:
Heat the oil in a wok or large frying pan
Add the pork then stir and fry until the pork is cooked through
Add the onion, garlic and bell peppers and stir fry for one minute
Add the soy sauce and stir to mix
Add the pickled mustard greens and stir fry until cooked and hot

Serve with rice

Brined and Oven-Roasted Turkey

Brining is a great way to preserve the succulence of a roasted turkey, it locks moisture into the meat and helps to crisp up the outer skin. The result is juicy meat that carves nicely and presents beautifully, but the best thing about it is the taste!

Recipe

For the brine:

750ml/26 fl oz water
1 cup salt
1 cup soft brown sugar
Half cup of seasoning salt of your choice
Tsp dried thyme or a sprig of fresh thyme
Tsp dried sage or a sprig of fresh sage, chopped
Tbsp black peppercorns

In a large saucepan, bring to a boil and stir to dissolve the salt and sugar
Top up with 750ml/26 fl oz cold water
Add 1 cup cider vinegar or white wine vinegar

Place your fresh or defosted turkey in a suitably sized food safe container
Add 1 party bag of ice
Add the brine
Add two heads of garlic, cut in half or crushed
Top up with water and weight down the turkey with food safe items until it is completely immersed

Stand 24 hours or at least overnight

Roasting:

Drain, pat dry the turkey, discarding the brine
Baste the turkey with oil and season well
If required, stuff the neck end only
Place 2 halves of lemon or half an onion in the body cavity to retain moisture

Weigh the prepared turkey

Place the turkey breast-down in a roasting tin and cover with foil to seal
Roast at 180C/350F for 35-40 minutes per kilogram/16-18 minutes per lb
Uncover, baste and turn breast side up for the last 40 minutes of cooking time
Check the internal temperature has reached at least 75C/165F at the thickest part

Allow to stand for at least 20 minutes before carving
The internal temperature will rise slightly as the bird stands, before it begins to cool down

in this video I demonstrate how to cook a Christmas festive ham, glazed with honey and mustard and studded with cloves. This has been my standard festive baked ham recipe for as long as I can remember.

The tradition of the clove-studded glazed baked ham in this pattern, is to represent the skin of a pineapple. For many years the pineapple was a sign of wealth and status, because only very few Victorian kitchen gardens were able to grow pineapples, and then only at great expense!
