INGREDIENTS :

8 pork sausages
3 medium onions ( sliced / wedged )
4 tablespoons vegetable oil
150 grams + 2 tablespoons plain flour
200 ml milk
4 eggs
1 1/2 teaspoon dried sage
500 ml beef stock
50 grams grated cheddar
1/2 teaspoon salt
1/2 teaspoon ground black pepper
50 grams butter
1 tablespoon dijon mustard

INSTRUCTIONS :

.place 8 sausages, 1 onion ( wedged) into baking dish
.drizzle 2 tablespoons vegetable oil on top
.season with 1/4 teaspoon salt & 1/4 teaspoon ground black pepper
.place in preheated oven 180 c / 356 f for 15 minutes
.in a mixing bowl add 150 grams plain flour & whisk in 4 eggs
.add a pinch of salt, 200 ml milk & whisk until smooth
.add 1 1/2 teaspoon dried sage & mix well
.after 15 minutes remove baking dish & add batter mix
.place back in oven for 20 to 25 minutes to continue cooking
.in frying pan on medium heat add 2 tablespoons vegetable oil
.add 50 grams butter and melt

500 grams fusilli pasta
1 chopped onion

100 grams sun dried tomatoes
1 tablespoon cajun seasoning

270 ml heavy cream
1/8 teaspoon salt
1/8 teaspoon ground black pepper

INSTRUCTIONS :

.in frying pan add 2 tablespoons sun dried tomato oil on medium heat
.add 650 grams diced chicken breast
.add 1/8 teaspoon salt, 1/8 teaspoon ground black pepper
.cook until almost white, approximately 5 minutes
.add 80 grams thinly sliced & diced chorizo
.continue cooking for approximately 6 minutes & remove from pan
.in same pan add 1 tablespoon sun dried tomato oil
.add 1 chopped onion and cook until tender, approximately 4 minutes
.add 3 minced garlic cloves, 100 grams chopped sun dried tomatoes
.cook for 2 to 3 minutes
.add 1 tablespoon cajun seasoning and stir well
.meanwhile boil 500 grams fusilli pasta and remove from water ( keep pasta water )
.( back to the sauce ) add 270 ml heavy cream to onions and stir well
.cook on simmer until slightly reduced
.add chicken and stir well
.add 3 tablespoons pasta water and mix
.cook for a further 3 to 4 minutes
.in a mixing bowl add pasta, chicken & sauce and mix together
.Serve and garnish with parsley

250 grams sliced chestnut mushrooms
4 minced garlic cloves
3 tablespoons olive oil
2 tablespoons dijon mustard
50 grams melted butter
1 beef stock cube
2 cups hot water
2 teaspoons corn flour
200 grams greek yogurt
1/4 teaspoon ground black pepper
1/4 teaspoon salt

INSTRUCTIONS :

.add 2 tablespoons olive oil to pan on medium heat
.add 600 grams inch sliced beef steak
.add 1/4 teaspoon salt, 1/4 teaspoon ground black pepper
.stir and cook until brown and remove beef from pan
.in same pan add 1 tablespoon olive oil on medium heat
.add 2 chopped medium onions, 4 minced garlic cloves
.cook until onions are tender and remove from pan
