In this video, I show you "How to Make Great Smothered Cubed Steaks!" This is one of my favorites and one of the foods my mom used to make when I was a kid... and an adult. This is my take on her basic recipe. Another great winter time comfort food that's sure to be a pleaser. I hope you enjoy the video.

In this video, I show you how I make Chuck's (me) version of pork fried rice. I only take a couple liberties from what I know to be traditional but I do try to stay close and the results were phenomenal. This is not the easiest recipe you will ever make, there are a lot of moving parts and once the pork is browned things move along pretty fast and when you're cooking on high heat things have to move quickly to prevent burning. This is not a recipe to walk away from the stove on. I don't want to make it sound too hard, you can do this. I hope you enjoy the video!

In this video, I use my homemade corned beef to make corned beef and cabbage. A little FYI, while doing my research, I found out corned beef with cabbage is not a traditional St. Patricks Day meal in Ireland, it's an American tradition. As you'll see, corned beef with cabbage is not all that difficult to make other than it is time-consuming. Even my beginner cooks should be able to handle this one with store bought corned beef. I hope you enjoy the video!

In this video, I remove the corned beef from the brine and clean it of the pickling spice which has stuck to the outer surface. This is corned beef in its raw form from which many other recipes can be made and now at the junction point for three videos I intend to make using the corned beef as a main ingredient in the near future. I hope you enjoy this video!

First, let me apologize for the static popping in the audio, I know it's a problem and I'm working diligently to locate the cause for future videos. If you have any constructive ideas, please leave a comment.

This video is broken down into three parts, in Part 1, I show you how to go about making the curing brine for the meat. In Part 2, I show you how to trim and separate the brisket into the point and flat pieces. In Part 3 we bring the first two parts together and begin the actual brining of the meat.

Bar-B-Q sauce sounds like it might be pretty simple to make, doesn't it? Well, in terms of the number of ingredients involved, my Bar-B-Q sauces might be the most complicated thing I make in the kitchen. My reasoning for so many different ingredients is to make a very complex, and at the same time very good sauce that is probably much different than what most people are used to. That being said, the process itself isn't so complicated, as you will see. I hope you enjoy the video!

Folks, I do apologize for the sound issues in this video, I know it's in my editing software and has to do with the syncing of the sound of multiple cameras but beyond that, I'm lost. The problem is very distressing to me.

We're makin' bacon in this video, more precisely, "Buckboard Bacon" which is bacon made from some other part of the hog than the belly. In this case, I'm making it out of the pork butt. In this part 1, I make the curing brine, prepare the pork butt for the brine, and put meat into the brine to begin the curing process. I'm sure you're going to enjoy this video.

Yes! In this video, we are making Chuck's Rustic Farmhouse Loaf. This is my all-time favorite bread recipe, it uses a combination of whole wheat and all-purpose flours. It can be easily adapted to using totally all-purpose flour or bread flour if you wish. This is a great starting point for many other types of bread, I love it and I'm excited to share it with you folks. I hope you enjoy the video! This video is dedicated to my son Chase who believe he wants to become a baker/pastry chef.

**** It was brought to my attention that at the beginning of the video my measurement for sugar and sucralose is 3 1/2 cups of each but the link to the printed recipe says 4 1/2 cups of each, 4 1/2 cups is the correct measurement for both the sugar and sucralose (Splenda).

Would you like to add a little spice to your life? Trust me, "Chuck's Real Deal Jalapeno Jelly" is sure to liven things up. I ran out of my last batch eating it on the homemade bread from the previous video. They were so great together. If you're a "hot head" like me and like spicy foods you'll want to give this a try, that combination of sweet and heat is something I love. I did reduce the sugar in this recipe by mixing the sugar 50/50 with sucralose (Splenda) and using Ball low or no sugar pectin.

I know this is an incredibly easy recipe but it's summertime and that's kind of the point, nobody likes to spend too much time in the kitchen in the Summer, including me but most of us don't only eat Bar-B-Q in the Summer, we need something to go with. So this may be the easiest summer salad recipe I know how to make and is the first in a three-part series of salads all based on the same vinegar and sugar pickling mixture. All three are great for cookouts and picnics because they're not mayonnaise based and can spend extended time unrefrigerated without spoiling. I hope you enjoy the video!

I've been wanting to make goulash (American goulash) for some time but I wanted something different. The other day, another creator posted his recipe for bolognese sauce and I knew as soon as I saw it what I wanted to do with his basic recipe, of course, I had to put my own twist onto it but that's what I do. This is a time-consuming recipe but the payoff is worth the effort. I hope you
enjoy the video!

In this video, I'm kind of recreating a dish I first encountered in the Army, braised beef over rice. I recently watched Harry Soo (https://www.youtube.com/channel/UC4dtbTXdvjo272b5x_mxRBw) smoke a whole packer beef brisket in about 5-6 hrs. on a Weber Smokey Mountain smoker using his "Hot and Fast Method" and I was intrigued and decided I wanted to give it a go on Betty Lou my large stick burner to see what kind of results I might get. I had a couple of challenges but I managed to make it through and I think the results will speak for themselves. I hope you like the video!

Sometimes you just need to play around a little bit to see what happens. So in the vein of my smoking Spam, and maple syrup videos I came up with the idea of smoking a canned ham. After researching the ingredients and finding no smoke or liquid smoke I jumped in with both feet and it turned out amazingly good, good enough I'd do it again in the future. I hope you like the video!

This is a long lost recipe I haven't made for way too long. In this video, I'm making what the Army calls Creamed Beef but out here on the street, you might know it as "Hamburger Gravy", "S.O.S.", or "[email protected]% on a Shingle." The reason I haven't made it in so long is, I've tended to gravitate towards sausage gravy. Maybe I got kind of burned out on it from my time in the Army where I ate it at least 4-5 times a week on average. That being said, maybe it's time I revisit it more often. I hope you enjoy the video!

It was recently requested by one of my viewers that I make a video featuring hash browns, I assume he was talking about traditional shredded hash browns but the term could be open to interpretation as you'll see because I found two ways to make hash browns. I hope you enjoy the video.

Is there such a thing as summertime comfort food? I think there is and a good corn dog is just what I need to take me back to my childhood days. They're really very easy to make from scratch, I think you'll like them.

You can find the recipe here: https://www.tasteofhome.com/recipes/indiana-style-corn-dogs/

This video builds upon my previous video where I showed how to make macaroni with a bechamel cheese sauce by using the macaroni as the base for traditional Tex-Mex taco filling to sit on. Very satisfying indeed but have a couple of tortilla chips on hand to add some crunch. I hope you enjoy the video!

This is the first video in a two-part series but because macaroni and cheese can stand as a recipe unto itself I wanted to split it off into its own video. Making a creamy cheesy bechamel sauce isn't that hard, it's all a matter of getting proportions correct. A basic bechamel is a continuation of our gravies we have made multiple times this Fall/Winter and if you can make a gravy you can make this cheesy bechamel sauce. I hope you enjoy the video!

Believe it or not, Spring will get here and what better dessert for Spring than Strawberry Shortcake? This homemade strawberry shortcake recipe is so easy to make, it reminded me of making a giant drop biscuit. It was so tasty and a joy to make. This recipe was taken from a 1963 Pillsbury cookbook but it's just as good today as when I was 2 or 3 years old. I hope you enjoy the video!

It's finished! After nine months of pretty intensive labor, a little blood and quite a lot of sweat it's finally finished and it's time to do the final reveal, a walk around, and critique of this build. All-in-all, I'm very satisfied with this build.

If you see something you like or if I've helped you out in some way and you wish to send a tip it will be greatly appreciated. If not, I still appreciate your watching. Links are below:

Most of my videos will involve Bar-B-Q and cooking in general, however, in warmer weather I may veer off into some outdoor how-to type videos such as wood or metal fabrication. I'm a project type person and love nothing better than building or making something. Welcome to the channel, I'm sure you will find something of interest as I continue to expand my offerings.
