STERILISE JARS (I USED KILNERS) IN THE OVEN AT AROUND 200c FOR A HALF HOUR AFTER WASHING IN CLEAN HOT SOAPY WATER AND RINSING WELL. IF USING KILNER JARS, PLEASE DON'T PUT THE RUBBER SEALS IN WITH THEM!
QUARTER THE APPLES AND USING A WEE PARING KNIFE, REMOVE HARD BITS OF CORE AND PIPS.
PLACE IN A LARGE HEAVY PAN, AND ADD AROUND HALF A JUGFUL OF WATER FOR THE SAME AMOUNT YOU CAN SEE IN MY VID. IF YOU'VE MORE OR LESS APPLES, YOU'LL HAVE TO GUESS. WATER UP TO A THIRD OF THE PAN IS USUALLY JUST FINE.
THEN ADD AROUND EIGHT TO TEN SERVING (LARGE, NOT TABLE!) SPOONS OF SUGAR. NO NEED FOR FANCY SUGARS UNLESS YOU WANT THOSE, I USE PLAIN GRANULATED AND IT WORKS FINE.
IF YOU LIKE YOU CAN ALSO ADD A FEW TEASPOONS OF CINNAMON (BUT I'D RUN OUT SO DIDN'T) AND A SPLASH OF POITIN DOESN'T HURT EITHER (OR WHISKY, COGNAC, BRANDY, WHATEVER) BUT IT ISN'T A NECESSITY, JUST A LUXURY. :)
PUT ON A LOW HEAT AT FIRST, THEN WHEN YOU STIR AND FEEL THE APPLES AT THE BOTTOM BEGIN TO BE COOKED, TURN UP THE HEAT.
THE JAM NEEDS TO BOIL..I LET MINE REACH A ROLLING BOIL AND LEAVE IT, STIRRING EVERY FIVE MINUTES TO AVOID BURNING AT THE BOTTOM OF THE PAN.
BE SUPER CAREFUL AT THIS STAGE BECAUSE SCALDING HOT JUICES *WILL* SPIT OUT AT YE! SO COVER ARMS AND HANDS AND MIND KEEP YOUR FACE OUT FROM ABOVE THE PAN.
ONCE THE JAM HAS SET (LIFT A SPOONFUL UP, IT SHOULD SLIDE *VERY* SLOWLY OFF AND NOT RUN OFF), TURN OFF THE HEAT AND LET COOL TO HOT FROM THE BOIL.

PLUS I MUCKED OUT THE SWEDISH FLOWER HENS WEE BARN AND LAID DOWN FRESH BEDDING FOR THEM. AND THE SUN SHONE, AND FLOWERS BLOOM, SO IT'S NOT ALL HARD WORK WHEN YOU STOP A MINUTE OR TWO TO LOOK AT IT, AND THE FIELDS, HILLS AND WOODLAND, AS WELL AS TAKING A CLOSER LOOK AT THE VARIOUS TOADSTOOLS AND HIDDEN WILDFLOWERS. IT'S BEEN A BONNY DAY.

THEY USED TO REFUSE TO WALK TO THEIR RUNS AND THE BARN, SO WE'D CARRY THEM ONE BY ONE. THEY HAD US TRAINED! THIS IS PROGRESS.
