It's time to experiment in the kitchen. I made 2 types of pumpkin chocolate chip cookies. One with oatmeal and the other with pepitas. I had never made these before but they both turned out delicious.
375 degree Fahrenheit
Ingredients:
4 eggs
7 cups of flour
4 sticks (1 pound butter)
29 oz can of pumpkin
4 cups chocolate chips
2 cups pepitas
3 cups old fashioned oats
3/4 cup granulated sugar
2 and 1/4 cups dark brown sugar
2 tablespoons cinnamon
2 teaspoons ground ginger
1 teaspoon ground cloves
1 1/2 teaspoon grated nutmeg
2 teaspoons baking soda
2 teaspoons salt
Oatmeal Raisin Cookies: So easy even I can do it!
Hey friends- I have a confession. I have NEVER made cookies from scratch..... EVER. I had no idea how to make cookies. I may have baked those pre-made cookies years ago, but that doesn't really count I wanted to give this recipe which I found on the back of an oat box a try but in my usual fashion I had a "Use what you've got" situation
Below is the original recipe and in parenthesis is how I cut in half or made substitutions.
Homestly, I was expecting a disaster and was VERY pleased with how they tuned out.
I will definitely make them again.
1 cup vegetable shortening (1/2 cup butter)
1 cup sugar ( 1/2 cup sugar in the raw)
1 cup brown sugar (1/2 cup)
2 eggs ( 1 egg)
1 teaspoon vanilla extract (1/2 teaspoon)
1 1/2 all purpose flour (3/4 cup bread flour)
1 teaspoon baking soda (1/2 teaspoon)
1 teaspoon salt (no salt)
3 cups of Old fashioned oats (1 1/2 cups oats)
1 cup of raisins (1/2 cup)
Walnuts - optional (no walnuts - they make my throat itchy)
