INGREDIENTS :

6 bananas
125 grams blueberries
100 grams walnuts
3 cups of flour
1 cup sugar
2 teaspoons baking soda
1/8 teaspoon salt
2 teaspoons vanilla extract
2 eggs
2/3 cup melted butter

INSTRUCTIONS :

.in a bowl mash 6 bananas
.add 2 teaspoons vanilla extract and mix together
.add 2/3 cup melted butter and mix together
.add 1 cup sugar and mix together
.add 1 egg, mix & repeat ( 2 eggs total )
.add 1/8 teaspoon salt, 2 teaspoons baking soda
.add 1 cup flour, mix & repeat ( 3 cups total )
.add 125 grams blueberries, 50 grams walnuts & mix together
.pour mixture into two buttered baking tins and lined with parchment paper ( half full )
.top with 50 grams walnuts
.tap tins and place in preheated oven 180 c / 356 f for 45 minutes to 1 hour

INSTRUCTIONS :

.boil 500 grams macaroni until soft
.drain macaroni and add to mixing bowl
.add 80 grams melted butter and mix together
.in a jug add 800 ml evaporated milk, 50 ml milk, 2 eggs
.add 1/8 teaspoon garlic powder, 1/8 teaspoon onion powder
.add 1/4 teaspoon salt, 1/8 teaspoon chili powder & mix together
.in another bowl mix 475 grams grated red cheddar, 250 grams grated mozzarella
.in a buttered baking dish layer with macaroni and cheese and sprinkle with paprika
.pour on milk mixture and sprinkle with paprika
.bake in preheated oven 180 c / 356 f for 20 to 25 minutes

4 halved chicken breasts
130 grams grated parmesan cheese
400 grams sliced mozzarella
4 minced garlic cloves
2 cans chopped tomatoes in juice
1 1/2 cups chicken stock
2 tablespoons milk
1 cup plain flour
3 eggs
2 cups breadcrumbs
1/2 teaspoon ground pepper
1/2 teaspoon salt
1 teaspoon sugar
1 tablespoon dried basil
1 tablespoon dried parsley

1 teaspoon onion powder
2 tablespoons olive oil

INSTRUCTIONS :

.in a frying pan on medium heat add 2 tablespoons olive oil, 4 minced garlic cloves, cook for a 2 to 3 minutes
.add 1 teaspoon chilli powder, 1 1/2 cups chicken stock, cook for 2 minutes
.add 2 cans chopped tomatoes in juice and cook for 3 minutes
.add 1/4 teaspoon salt, 1/4 teaspoon ground pepper, 1 teaspoon sugar
.add 1 tablespoon dried parsley, 1 tablespoon dried basil, leave to simmer
.in a bowl add 3 eggs, 2 tablespoons milk & whisk together
.in a bowl add 2 cups breadcrumbs, 1/4 teaspoon salt, 1/4 teaspoon ground black pepper
.add 1 teaspoon onion powder, 1 teaspoon garlic powder & mix together
.dip chicken breast halves in flour, egg mix, breadcrumbs & set aside
.in a frying pan on medium to high heat shallow fry chicken in olive oil for 3 to 4 minutes on each side
.in a baking dish(es) ladle in some sauce
.add chicken and ladle some more sauce on top
.layer with mozzarella slices
.sprinkle well with grated parmesan
.place in preheated oven 180 c / 356 f for 15 minutes
.serve with pasta

.cook on medium heat for 10 to 15 minute until reduced

.add mushroom mixture back into frying pan
.add 400 grams chopped tomatoes in juice, 1/4 teaspoon salt
.add 1/4 teaspoon ground black pepper, 1/4 teaspoon chilli powder, 1 1/2 cup water & mix together
.add 500 grams gnocchi, 20 grams grated parmesan, mix together and cook for 2 minutes
.place in a baking dish, sprinkle 20 grams grated parmesan
.place in preheated oven 180 c / 356 f for 15 minutes
.top with pesto and sprinkle grated parmesan & ground peppercorn

Hey Everyone!

As you can tell...this is NOT a normal video but I enjoyed making it for you. And as my channel name says, this is the And More part of the Traveling Crane. I wanted to add cooking video's to my channel but did not want to make too many, so these videos will be few and far between.

I give my dad credit for everything, and I'm giving him credit for teaching me this skill. I probably paid more attention in the kitchen then I did in the wood shop. Cooking is a skill and I happy that I paid attention like I did. Baking cakes, cookies, pies, etc. is probably my favorite (I see a humming bird cake in the future :) ), but meals like breakfast and dinner are an everyday thing for me and I like to try different recipes. This is one of those recipes. I came across this on Pinterest and I am sure their are plenty of recipes like this one out there. I did tweak the recipe by adding chicken,. Now this is a staple in my household.

Wild Rice & Mushroom Soup

Ingredients
1 1/2 cups Cooked Chicken (shredded) *
2-3 Carrots diced
2-3 Celery diced
1 medium Onion diced
1 lb or 2 packages of Cremini Mushrooms
2 cloves Garlic (minced)
6 cups Low Sodium Chicken Broth*
1 1/2 cup Wild Rice*
4 tbsp Butter (divided)
1 cup Milk or Cream*
1 cup Parmigiano Reggiano
salt & pepper to taste*

* I used 2 chicken breast cooked in my air fryer. You can also use a rotisserie chicken that has been shredded I love cremini mushrooms, but you can use baby bella's if you want or even button mushrooms. For the Wild rice, if you don't have any, you can use regular white rice. This will work just as well. My wild rice is a combination of Basmati brown rice, soft white wheat, Rye berries & wild rice. What ever rice you use, will determine your cooking time. My blend calls for 45mins. If you use heavy cream, your soup will be creamier. I used salted butter, but low sodium broth. So I didn't really need to add anymore salt to the soup. Be careful you don't over salt the soup.

directions

1. Melt the butter in a pan over medium-high heat, add the mushrooms and cook until the mushrooms have released their liquids and the liquid has evaporated, about 10-15 minutes, before setting aside.
2. Melt the butter in the pan, add the onions, carrots, celery and garlic. add salt and pepper and cooking until onions are translucent.
3. Add the broth, rice, chicken and mushrooms, bring to a boil, reduce the heat and simmer, covered, until the rice is tender, about 45 minutes.
4. Mix in the milk and cheese and cook until the cheese has melted, before seasoning with salt and pepper to taste.

1 pack oreo cookies
340 grams cream cheese

1 egg ( room temperature )

INSTRUCTIONS :

.put cupcake liners into muffin tray, place whole oreo into each liner
.in mixing bowl add 340 grams cream cheese and mix
.add 1/2 cup sugar, 1/4 teaspoon salt, 2 teaspoons vanilla extract
.mix until smooth consistency
.add 1/4 cup sour cream and mix until smooth consistency
.add 1 egg and mix until smooth consistency
.chop 4 oreo cookies into small pieces
.add to cream mix and fold in
.fill liners with mixture
.place in a preheated oven 180 c / 356 f for approximately 20 minutes
.leave to cool for 1 hour
.place in fridge to set for 3 hours
.Top with whipped cream, half Oreo and sprinkle Oreo powder

INSTRUCTIONS :

.in a mixing bowl add 500 grams chopped tomatoes in juice, 3 minced garlic cloves
.add 1 teaspoon salt, 1/2 teaspoon ground black pepper, 1 teaspoon oregano
.add 1 teaspoon cumin and mix together
.sieve in 2 tablespoons plain flour and mix together
.in a ceramic pot add 300 grams frozen mixed vegetables, 5 skinless, boneless chicken thighs
.add 200 grams butter beans, drizzle 2 tablespoons vegetable oil
.add tomato sauce and spread evenly
.sprinkle with a handful of chopped parsley
.layer with 300 grams thinly sliced potatoes, pressing down as you layer
.add 100 ml chicken stock
.cover with lid and place in preheated 180 c / 356 f for 1 hour
.remove from oven and press down potatoes, sprinkle some black pepper
.place back in oven for 30 minute uncovered
.garnish with chopped parsley

.add 2 tablespoons plain flour and cook until onions are tender
.add 500 ml beef stock and simmer until thickened and lump free
.sprinkle 50 grams grated cheddar & place back in oven until cheese is melted
.serve with mash potatoes & peas & drizzle with onion gravy

.fold in pastry edges

.make a small hole in middle of pastry
.you can use excess pastry to design pastry top ( optional )
.Place in a preheated oven 180 c / 356 f for 20 to 30 minutes

.add 400 grams minced beef, 2 chopped onions
.cook until beef is brown and onions are tender
.add 4 minced garlic cloves, 10 grams minced ginger
.add 3 chopped red chillies, 2 teaspoons turmeric
.add 2 lemongrass sticks, 5 lime leaves
.add 2 tablespoons water and stir well
.stir in 2 tablespoons plain flour
.add 250 ml coconut water, 400 ml coconut milk and stir well
.cover with lid and cook on simmer for 1 hour
.add 500 grams cubed swede and stir well
.add 60 grams tamarind paste and stir well
.cover with lid and cook for 20 minutes
.uncover and cook for 15 minutes until swede is soft
.add 3 tablespoons soy sauce and stir well
.remove from heat and leave to cool, remove lime leaves and lemon grass
.preheat oven 180 c / 356 f and roll out a short crust pastry sheet
.cut out medium size circles
.spoon filling into centre of each circle
.fold and seal the pastry
.make small hole on top of each pie
.place pies on baking tray lined with parchment paper and brush with beaten egg
.repeat process with 2nd short crust pastry sheet
.bake for 20 to 25 minutes until golden
.serve with lemon / lime slices & sweet chilli sauce

INGREDIENTS ( serves 2 ) :

90 grams mixed salad
( lollo rosso, lollo bionda, oak leaf )
220 gram salmon darnes
60 grams quartered cherry tomatoes
120 grams thinly sliced cucumber
40 grams thinly sliced red onion
30 grams grated cheddar cheese
2 tablespoons olive oil
2 teaspoons honey
1 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon ground black pepper

INSTRUCTIONS :

.season both sides of Salmon with 1/8 teaspoon salt & 1/8 teaspoon ground black pepper
.wrap salmon in foil
.place salmon in pre heated oven 180 c / 356 f for 20 minutes
.in a tub add 1 tablespoons lemon juice, 2 tablespoons olive oil
.add 1/8 teaspoon salt, 1/8 teaspoon ground black pepper
.add 2 teaspoons honey and mix together
.place 45 grams mixed salad on plate
.add 20 grams thinly sliced red onion, 60 grams thinly sliced cucumber
.add 30 grams quartered cherry tomatoes, 15 grams grated cheddar cheese
.place salmon on top and drizzle with dressing

INSTRUCTIONS :

.in blender beaker add 1 juiced medium lemon, 2 tablespoons extra virgin olive oil
.add 2 tablespoons water, 2 tablespoons honey
.add 1/8 teaspoon salt, 1/4 teaspoon smoked paprika
.add 1/4 teaspoon all spice, 1/4 teaspoon ground black pepper
.add 1 minced garlic clove and blend until smooth
.drizzle some dressing on trout fillets
.cook in pre heated oven 180 c / 356 f for 20 minutes
.in a mixing bowl add 100 grams mixed salad ( lollo rosso, lollo bionda, oak leaf )
.add 123 grams sliced & cubed cucumber, 1/2 red onion thinly sliced
.add 45 grams thinly sliced beetroot, 100 grams cubed feta cheese
.mix together very well
.serve salad mix on a plate
.place trout on top and drizzle with dressing

INGREDIENTS :

450 grams plain flour
250 ml warm milk
50 grams sugar
50 grams butter
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove powder
1/4 teaspoon ginger powder
1/4 teaspoon salt
7 gram sachet fast action yeast
30 grams raisins
1 egg

CROSS INGREDIENTS :
75 grams plain flour
1/4 cup water

GLAZE INGREDIENTS :
4 tablespoons powdered sugar
4 tablespoons milk

INSTRUCTIONS :

.in a mixing bowl add 250 ml warm milk, 7 gram sachet fast action yeast
.stir well and leave to sit for approximately 10 minutes for yeast to activate
.in another mixing bowl add 450 grams plain flour, 1/4 teaspoon salt
.add 1/2 teaspoon nutmeg, 1/4 teaspoon ginger powder
.add 1 teaspoon cinnamon, 1/4 teaspoon clove powder and mix together
.add 50 grams sugar and mix together
.add 50 grams butter and mix with hands until crumb consistency
.pour egg into milk and yeast and mix together
.pour wet mixture into dry mixture and mix together
.sprinkle flour on flat surface and remove dough from bowl
.sprinkle flour on dough and knead for approximately 2 minutes
.add 30 grams raisins and continue kneading for approximately 3 minutes
.cut the dough into 12 pieces
.place dough pieces into a baking dish coated in butter
.cover with a kitchen towel and leave to set for 1 hour
( cross )
.in small beaker mix 75 grams plain flour
,1/4 cup water until tacky consistency
.place mixture in a piping bag and pipe crosses onto the dough balls
.bake in a pre heated oven 180 c / 356 f for 25 minutes
( glaze )
.in a beaker mix 4 tablespoons powdered sugar, 4 tablespoons milk
.removes buns from oven and spread glaze on top

650 grams quartered baby potatoes
400 grams cubed chicken breast
3 minced garlic gloves
1/2 red onion chopped
100 grams sliced & chopped chorizo
200 grams canned chopped tomatoes in juice
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon thyme
1 teaspoon basil
1 tablespoon vegetable oil

INSTRUCTIONS :

.boil 650 grams quartered baby potatoes, cook until soft
.in frying pan add 1 tablespoon vegetable oil on medium heat
.add 400 grams cubed chicken breast and cook for 2 to 3 minutes
.add 100 grams sliced & chopped chorizo
.continue cooking for 5 minutes
.add 1/2 red onion chopped, 3 minced garlic gloves
.cook for 3 minutes
.add 200 grams canned chopped tomatoes in juice and stir
.add 1 teaspoon basil, 1/4 teaspoon thyme
.add 1/2 teaspoon ground black pepper, 1/4 teaspoon salt and stir well
.cook for 1 to 2 minutes
.place baby potatoes and chicken mix in bowl and mix together
.place in a baking dish and cook for 15 minutes in pre heated oven 180 c / 356 f

2 cups sugar
1/2 cup cocoa powder
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons baking soda
1 cup buttermilk
1 cup hot water
1/4 cup melted butter
1 tablespoon vanilla extract
3 eggs
150 grams melted chocolate

INSTRUCTIONS :

.in mixing bowl add 2 cups plain flour, 1/2 cup cocoa powder
.add 2 cups sugar, 1 teaspoon baking powder, 2 teaspoons baking soda
.add 1 teaspoon salt and mix together
.add 1 tablespoon vanilla extract, 3 eggs, 1 cup buttermilk
.add 1/4 cup melted butter and mix together
.add 1 cup hot water and mix together
.pour mixture halfway into baking tins lined with parchment paper and coated with butter
.tap the tins and place in a preheated oven 180c / 356 f for 30 to 35 minutes
.leave to cool
.once cool drizzle melted chocolate on top
