In this video, I show you how I make Chuck's (me) version of pork fried rice. I only take a couple liberties from what I know to be traditional but I do try to stay close and the results were phenomenal. This is not the easiest recipe you will ever make, there are a lot of moving parts and once the pork is browned things move along pretty fast and when you're cooking on high heat things have to move quickly to prevent burning. This is not a recipe to walk away from the stove on. I don't want to make it sound too hard, you can do this. I hope you enjoy the video!

In this video, I use my homemade corned beef to make corned beef and cabbage. A little FYI, while doing my research, I found out corned beef with cabbage is not a traditional St. Patricks Day meal in Ireland, it's an American tradition. As you'll see, corned beef with cabbage is not all that difficult to make other than it is time-consuming. Even my beginner cooks should be able to handle this one with store bought corned beef. We're making a great cold spaghetti salad that is so easy and at the same time so good. This is a great summer party salad but just as good all year long. A great cooking experience for the beginning cook, if you can boil spaghetti you can make this salad. It doesn't get much easier than that. Come on, and follow along!

In this video, I remove the corned beef from the brine and clean it of the pickling spice which has stuck to the outer surface. This is corned beef in its raw form from which many other recipes can be made and now at the junction point for three videos I intend to make using the corned beef as a main ingredient in the near future. This video is broken down into three parts, in Part 1, I show you how to go about making the curing brine for the meat. In Part 2, I show you how to trim and separate the brisket into the point and flat pieces. In Part 3 we bring the first two parts together and begin the actual brining of the meat.

Bar-B-Q sauce sounds like it might be pretty simple to make, doesn't it? Well, in terms of the number of ingredients involved, my Bar-B-Q sauces might be the most complicated thing I make in the kitchen. My reasoning for so many different ingredients is to make a very complex, and at the same time very good sauce that is probably much different than what most people are used to. That being said, the process itself isn't so complicated, as you will see. I hope you enjoy the video!

Yes! In this video, we are making Chuck's Rustic Farmhouse Loaf. This is my all-time favorite bread recipe, it uses a combination of whole wheat and all-purpose flours. It can be easily adapted to using totally all-purpose flour or bread flour if you wish. This is a great starting point for many other types of bread, I love it and I'm excited to share it with you folks. I hope you enjoy the video! **** It was brought to my attention that at the beginning of the video my measurement for sugar and sucralose is 3 1/2 cups of each but the link to the printed recipe says 4 1/2 cups of each, 4 1/2 cups is the correct measurement for both the sugar and sucralose (Splenda).

Would you like to add a little spice to your life? Trust me, "Chuck's Real Deal Jalapeno Jelly" is sure to liven things up. I ran out of my last batch eating it on the homemade bread from the previous video. They were so great together. If you're a "hot head" like me and like spicy foods you'll want to give this a try, that combination of sweet and heat is something I love. I did reduce the sugar in this recipe by mixing the sugar 50/50 with sucralose (Splenda) and using Ball low or no sugar pectin.

I know this is an incredibly easy recipe but it's summertime and that's kind of the point, nobody likes to spend too much time in the kitchen in the Summer, including me but most of us don't only eat Bar-B-Q in the Summer, we need something to go with. So this may be the easiest summer salad recipe I know how to make and is the first in a three-part series of salads all based on the same vinegar and sugar pickling mixture. All three are great for cookouts and picnics because they're not mayonnaise based and can spend extended time unrefrigerated without spoiling. I hope you enjoy the video!

Sometimes you just need to play around a little bit to see what happens. So in the vein of my smoking Spam, and maple syrup videos I came up with the idea of smoking a canned ham. After researching the ingredients and finding no smoke or liquid smoke I jumped in with both feet and it turned out amazingly good, good enough I'd do it again in the future. This is a long lost recipe I haven't made for way too long. In this video, I'm making what the Army calls Creamed Beef but out here on the street, you might know it as "Hamburger Gravy", "S.O.S.", or "[email protected]% on a Shingle." The reason I haven't made it in so long is, I've tended to gravitate towards sausage gravy. Maybe I got kind of burned out on it from my time in the Army where I ate it at least 4-5 times a week on average. That being said, maybe it's time I revisit it more often. This video builds upon my previous video where I showed how to make macaroni with a bechamel cheese sauce by using the macaroni as the base for traditional Tex-Mex taco filling to sit on. Very satisfying indeed but have a couple of tortilla chips on hand to add some crunch. I hope you enjoy the video!

This is the first video in a two-part series but because macaroni and cheese can stand as a recipe unto itself I wanted to split it off into its own video. Making a creamy cheesy bechamel sauce isn't that hard, it's all a matter of getting proportions correct. A basic bechamel is a continuation of our gravies we have made multiple times this Fall/Winter and if you can make a gravy you can make this cheesy bechamel sauce. I hope you enjoy the video!

Believe it or not, Spring will get here and what better dessert for Spring than Strawberry Shortcake? This homemade strawberry shortcake recipe is so easy to make, it reminded me of making a giant drop biscuit. It was so tasty and a joy to make. This recipe was taken from a 1963 Pillsbury cookbook but it's just as good today as when I was 2 or 3 years old. I hope you enjoy the video!

I recently saw another channel make cacio e pepe (cheese and pepper) and I knew when I saw it I had to give it a try due to its seeming simplicity and yet with only five ingredients, could I do something to change it to make it my own yet remain true to form? I came up with the idea of smoking the salt and pepper used in the recipe which I did in my prior video. I've also added in a bonus recipe into this video, How to make homemade garlic bread because pasta needs a good garlic bread to go with it, doesn't it? I hope you enjoy the video!

In this video, I started out to make Banana Nut Bread but somehow I ended up with Sweet Potato Nut Bread. I did use a banana nut bread recipe as the basis for this recipe but I removed and replaced a few things and added a couple more. This was some experimental cooking on my part but it turned out great! I think you'll like it, I hope you like the video too!

Have you ever wanted to see if you could replicate a commercial product as much for the fun of it as for the need to do it? I did so I set out to see if I couldn't hack Miracle Whip both for the challenge and for need.
You'll see the results of three of the four attempts where I failed. Yes, I failed four times in my attempts to make this Miracle Whip clone before I succeeded. Finally, after trying multiple recipes and techniques I found a combination that worked. The first two attempts were off both in taste and results, the next two were only off in the results of getting the egg yolks and oil to emulsify. So, after consulting what little online sources their are for Miracle whip clones I found a suitable recipe. I then began researching how to make mayonnaise because the beginning step is to make mayonnaise and I discovered that egg whites and a little water can help in the emulsification process and once I added one whole egg and an ounce of water into the eggs before blending as well as the very slow drizzle of oil into the blender were the keys to success in this recipe.
