Hello Friends and Viewers,

Learn to cook Swiss Chard the right way by removing the oxalates which are present in it. By removing the oxalates, you will notice a remarkable difference to the taste of this green leafy vegetable.
I am sharing a South Indian recipe in this video. Very simple and easy to make.

Ingredients
400 gm Swiss Chard any color Washed and chopped
1 tblsp of coconut oil
1 tsp of split Urad dhal
1 tblsp of channa dhal
2 dried red chillies
2 cloves of garlic (optional)
1 medium sized onion chopped finely
a pinch of asafoetida
1 tsp of black mustard seeds
1 tsp of salt
2-3 tblsp of freshly grated coconut or dessicated one will also work
a few cilantro leaves for the garnish.

Method

In a pot boil water and add in the chopped Swiss Chard leaves with the stem.
Cook this for 3 minutes and then drain out the water.
Heat a heavy bottom pan on medium heat and add in the coconut oil.
Roast the dhals then add in the mustard seeds to splutter, asafoetida and the red chillies. Add in the garlic cloves and saute it shortly before adding the chopped onions. Saute it for about a minute and then add in the cooked Swiss Chard. Cook down all the remaining water and saute it.
Add the salt and the desiccated coconut, stir in shortly and remove from heat. Garnish with freshly chopped Cilantro leaves before serving.

Gather your ingredients and in a pot add the following:
Some Oil - I prefer Avocado oil
5 Chopped Stalks of Celery
4 Skinned & Chopped Carrots
2 Chopped Cloves of Garlic & Half an Onion
Add Broth & Bouillon Cubes. I used about 11 cups water & 4 cubes
5 Small chopped Potatoes
1 Rinsed Can Beans of your choice
1 cup Noodles of your choice
Cook until everything is tender, roughly 45 mins to 1 hour.

Let me share my famous guacamole with you.

Recipe:
- three avocados
- two tablespoons sour cream (optional)
- five drops of lemon juice
- salt and pepper to taste (or use the amount I used)
- half small onion, minced
- one garlic clove, minced (optional)
- aprox. 20 leaves of cilantro chopped
- two tomatoes, diced
- two jalapeno peppers, minced (optional)

Instead of jalapenos, Tabasco works, or Tabasco habanero is awesome!

Best with corn chips and a classic movie.

Like we mentioned, liver is a nutritional powerhouse, nature’s multivitamin. Check this out!

One ounce of chicken liver contains: (what is in 1/8 of this recipe)
Vitamin A 3732 IU (75%)
Vitamin C 7.8 mg (13%)
Thiamine 0.1 mg (5%)
Riboflavin 0.6 mg (33%)
Niacin 3.1 mg (15%)
Vitamin B6 0.2 mg (11%)
Folate 162 mcg (40%)
Vitamin B12 4.7 mcg (79%)
Pantothenic Acid 1.9 mg (19%)
Iron 3.3 mg (18%)
Phosphorus 113 mg (11%)
Zinc 1.1 mg (7%)
Copper 0.1 mg (7%)
Manganese 0.1 mg (5%)
Selenium 23.1 mcg (33%)

*Also worth noting that because liver is from an animal source, many of these nutrients are a lot more bio-available than they would be in the context of a plant (specifically the vitamin A and minerals).

Our Liverwurst Recipe:
1 lb pork shoulder
½ lb pork belly
½ lb chicken livers
1 onion finely diced
2 tsp paprika
1 tsp marjoram
1 ½ tsp salt
generous freshly ground black pepper
½ teaspoon cumin/coriander mix
¼ tsp mace
¼ tsp allspice
¼ tsp ground cardamom

Grind meat components in a meat grinder separately, then together. Add onion and spices, mix and chill in freezer until firm. Grind again, then stuff into muslin bag or sausage casings. Simmer in water for 3 hours weighted down with plate. Cool in ice bath, then chill in fridge overnight. Enjoy!

Episode 1 of MCC's second season.

Since I was late getting the new season underway this was an impromptu video aided by my #1 apprentice. We make a quick but delicious pineapple BBQ marinade, cook some potatoes in the fire pit as well as corn in a grill pot. A couple tips included and some fun time with the little one.

Everything except the spelling of Mascarpone Cheese is so easy! There are only two ingredients involved and it's going to be one of those "Why didn't I make this before?" kinds of things. As you're about to see, it really is that easy and turns out the consistency of softened cream cheese. Once made, this does only last five days in the refrigerator so eat it up! I think you might find this video interesting, I shot this entirely with one camera, my Canon M50 while using the Rode Wireless Go and the Maovo lav. microphone plugged into the Wireless Go transmitter. This video was actually very fun to put together for you, there was some trickery involved.

This is a project video in that it took slightly longer than a month to complete from start to finish.

This is Meat Cutting Creations first Christmas time holiday video. The Cordon Bleu is a meal great for the 12 days of Christmas. Most people have a ham and or cheese platters. Many have lots of leftovers from these so here is a great meal for the 3rd or 4th day of Christmas!

I am joined by my beautiful daughter Rosalie. Was hesitant putting her in a video but she has taking such an interest in culinary I thought for the holiday season I'd be making videos with family and friends. Hope you enjoy!

Christmas Wild Rice Recipe

Ingredients:

2 Cups Wild Rice
6 Cups Water
1 Tbsp Salt
6 Chicken Bouillon Cubes
1 Tbsp Minced Garlic
1 Medium sized onion
1 LB (16oz) Bacon
2 Cups Celery
8 OZ Package of Portabella Mushrooms
1 Cup (8 Tbsp) of Butter

On a side note:

Try adding chicken, and if you really want to go WILD, try pheasant instead of chicken and moral mushrooms instead of portabellas!
