There is a little stand on Fairfax in Los Angeles, down the street from Canter's Restaurant where I used to buy falafels. Today, I got hungry for one and downloaded some images of them for a video I'm doing. Then I got curious. What's in the falafel balls? Chickpeas, garbanzo beans. I just made a big pot of them a few days ago and froze most of it. This recipe calls for just soaking them. They absorb the water and you chop them in a food chopper. I would use cilantro, because it chelates heavy metals and you discharge them from your body. The chef here uses Italian parsley. Onion, garlic, salt, cumin. The sauce is hummus, which is also garbanzo beans. When he dips the fried balls into the sauce, I nearly died from the envy!
