After planting these Sunchokes (AKA Jerusalem Artichokes) only about six months ago, the time to harvest them has come. I had heard that you could get a 10X harvest on these, so I was eager to dig into the soil and see what was going on.

With the help of my oldest son, we got to work. The Goats and Sheep had already been fed all of the stems, flowers, and leaves, so now it was up to us to get the tubers out.

Sure enough, these things had reproduced like crazy! I'm definitely saying that our harvest was more than ten times what we planted. At the moment, we are working on replanting some and storing the rest to enjoy! If you've never grown Sunchokes yet, I'd highly recommend it.
