How to Cook Apple and Onion Ketchup - Recipe in the Description Below
In this video I demonstrate how to cook apple and onion ketchup. The recipe and ingredients are listed below.
Apple and onion ketchup is delicious, especially with pork, ham, bacon and turkey. It can be used in place of tomato ketchup for most applications.
Makes approximately 500ml or slightly more.
2 apples, cored and chopped.
2 red or brown onions, chopped.
4 tbsp dark brown cane sugar.
2 tbsp dark muscovado sugar.
2 tbsp Demerara sugar.
200ml/7 fl oz cider vinegar.
1 tsp sweet paprika powder.
1 tsp powdered ginger or 1 tbsp fresh grated ginger.
1 stick of cinnamon/cassia or 1 tsp cinnamon powder.
2 tsp salt.
1 tsp black pepper.
Bring all ingredients to a boil and simmer for 20-25 minutes.
Blend until very smooth then test for taste and adjust with salt or sugar or both.
Remove the cinnamon stick if used.
Allow to cool to bottling temperature 80C/176F before bottling in clean and sterile bottles.
This ketchup is self-stabilising due to the pectin content of the apples, so there is no need to use a stabilising agent like xanthan gum, guar gum or starch.
