It was cold and dark today so I thought a good soup was in order. I had some frozen oysters and although I like them fried as does everyone, I need to ut down on my advancing waistline so I opted for a New England/Southern Coastal classic. You can make this slowly over several hours as I did while going about my chores, or within about 30 minutes if you stand by the stove and monitor closely. If it gets too hot and the milk separates, as it did here, just add more milk, butter and flour and stir on low heat.

(1)Super-hot Pepper cut in half

Salt & Pepper
