Please know that I like spicy and strong flavorful food. These measurements are for my taste. If you want a milder flavor, you can use less spices. But understand that it may adjust the overall taste. Typically, this dish is made with lamb. But since it is too expensive, I am using beef. Using the pressure cooker really helps to make the beef soft and tender. Plus, it's super easy to throw everything in and just cook. I hope you will enjoy this recipe!

Beef Rogan Josh Recipe | Spicy Indian Beef Curry | EASY PRESSURE COOKER RECIPES

INGREDIENTS:
• 2 tbsp (35g) LIGHT OLIVE OIL
• 4 tbsp (40g) MINCED/CHOPPED FRESH GARLIC
• 3 tbsp (40g) MINCED/CHOPPED FRESH GINGER
• 1/2 cup (125g) PLAIN YOGURT
• 2 tbsp (14g) TOMATOE PASTE
• 4 tsp (20g) GARAM MASALA
• 2 tsp (10g) SMOKE PAPRIKA
• 3 tsp (15g) SALT (more/less to taste)
• 2 tsp (6g) GROUND TUMERIC
• 1 tsp (3g) GROUND CINNAMON
• 1 tsp (4g) GROUND CAYENNE
• 1 tsp (3g) GROUND RED CHILI POWDER
• 2 cups (300g) CHOPPED RED ONION
• 1 cup (17g) CHOPPED FRESH CILANTRO
• 2.2 pounds (1000g) BEEF STEW MEAT
• 2 tbsp (30g) SOUR CREAM (curd)

HOW TO MAKE IT:
1. Put all the ingredients into a pressure cooker and cook with the valve CLOSED for 45 minutes. Then check and cook longer as needed. Mine took much longer because the beef I use is very tough. Yours may be done sooner.
2. Saute to decrease liquid as needed and remove from heat
3. Add sour cream if desired

INSTANT POT:
1. Add 1/4 cup of water to prevent "BURN" error
2. Pressure valve in CLOSED position
3. High Pressure for 15 minutes and let it Natural Release for 15 minutes
4. Saute to reduce sauce as needed
