Step By Step Instruction: Make an everyday wheat bread from freshly ground hard white or red wheat. This recipe makes 2 monster loaves of excellent sandwich-type bread.
Ingredients List:
9 1/2 Cups Hard Red or White Wheat (I used white wheat)
3 3/4 cups of hot water
2 1/4 Tablespoons of Active Dry Yeast (I used Fleischmann's)
1/2 cup Honey
1/2 cup oil
3 1/4 tsp salt
Steps:
1.Sift wheat to remove the bran. This is optional, but you'll get a better rise out of the bread.
2. Measure Out 9 1/2 cups flour
3. Mix 2 3/4 Tablespoons Dry yeast into 3 3/4 cups of hot water, mix and cover for 5 minutes.
4. Mix 3 cups of flour and the active yeast & water mixture into a mixing bowl, cover, and let sit for 20 minutes
5. Check that the proof mixture is active. If it's bubbling, add the honey, oil, salt, and 5 cups of flour to the mixture. (This leaves 1 1/2 cups of flour to work with)
6. Stir the mixture with a wooden spoon until it starts pulling away from the mixing bowl walls. If necessary, add extra flour to reduce stickiness as you stir. (add a tiny bit at a time and work it in)
7. Pour mixture onto a flat surface for hand kneading. It's going to take about 20 minutes to get a stretchy, soft dough that doesn't stick—dust the counter, bread, your hands, and mixing board with flour as necessary.
8. Once the dough is soft and stretchy, divide it in half and form two dough balls
9. Grease two 9x5 bread pans with oil and place one dough ball in each pan
10. Cover the bread and pans for 20 minutes until the dough is an inch above the edge of the pan.
11. Preheat over to 375° F
12. Cook on the middle rack for 40 minutes
13. Let bread rest:10 minutes
14. Remove bread from the pan(s) and let it rest until its at room temperature
15. Eat.
