This carrot cake is sooooo good! I can't stop eating it! Wholemeal flour is wheat flour (from what I understand). Not the coarse grind but more finely milled whole wheat flour. It's called wholemeal in some countries, like UK, Autralia, Germany etc. I don't know much about the variety of flour in the market but you can search online for more detail explanations. If you love carrot cake! Definitely make this WITH the frosting!
Carrot Cake With Cream Cheese Frosting | Easy & Simple Recipe | EASY RICE OOKER CAKE RECIPES
NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups
* Please READ Important TIPS at the end of video
INGREDIENTS:
CAKE:
• 1 cup (145g) WHOLEMEAL FLOUR (finely milled wheat flour)
• 1 tsp (6g) BAKING SODA
• 1/2 tsp GROUND NUTMEG
• 1/2 tsp GROUND CLOVES
• 1/2 tsp GROUND CINNAMON
• 2 EGGS
• 1 cup (160g) BROWN SUGAR (packed)
• 1 tsp (5g) VANILLA EXTRACT
• 1/2 cup (125ml) COCONUT OIL
• 1 1/2 cup (240g) SHREDDED CARROTS
FROSTING:
• 8 oz (226g) CREAM CHEESE (room temp soft)
• 1/2 cup (100g) UNSALTED BUTTER (room temp soft)
• 1/2 cup (60g) POWDERED SUGAR (icing sugar)
• 1/2 tsp (3g) VANILLA EXTRACT
HOW TO MAKE IT:
1. Shredded 1 to 2 carrots, to get the required amount for the recipe
2. In a bowl whisk together flour, cinnamon, nutmeg, cloves, and baking soda
3. In a large mixing bowl, whisk eggs, brown sugar, oil and vanilla extract until combined
4. Add the flour mixture and mix to incorporate
5. Fold in the carrots
6. Bake in lined pot/pan for 2 bake cycles (60 min) then check. Rice cooker varies so bake longer if needed. Mine took 3 bake cycles (90 min)
7. Cool cake completely before frosting, about 2 hours
8. Beat frosting ingredients until well combined and frost cake as you like. I cut my cake in half and frost the middle for a two layer cake. So yummy
OVEN BAKING:
Bake in greased and lined pan, in pre-heated oven of 350F (180C) for 45-60 minutes. Ovens varied so check around 40 minutes. Bake longer as needed
