Pumpkin Pie Recipe From Scratch | With Butternut Squash | No Oven | EASY RICE COOKER RECIPES
NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups
* Please READ Important TIPS at the end of each video
* Need 1 butternut squash about 500g whole
INGREDIENTS:
Filling
• 2 cups (450g) BUTTERNUT SQUASH PUREE (mashed)
• 2 tsp (6g) GROUND CINNAMON
• 2 tsp (6g) PUMPKIN PIE SPICE
• 2 EGGS
• 1 can (14oz/380g) SWEETENED CONDENSED MILK (can varied but about this amount)
Crust
• 1/3 cup (80g) UNSALTED BUTTER (melted)
• 2 tbsp (30g) SUGAR
• 1 1/4 cup (125g) GRAHAM CRACKER CRUMBS (or oreo cookie crumbs without filling)
HOW TO MAKE IT:
1. Cook butternut by steaming or boiling it then let it cool
2. Mix the crust ingredients together and pressed it onto a lined pot/pan, extending the sides up about 1 inch (2cm)
3. Mash the cooked squash and mix the filling ingredients together until combined. you can use a whisk or electric mixer to make it more smooth but it's not necessary
4. Pour into pan and bake. NOTE: This pie took my rice cooker 6 bake cycles or 3 hrs. Rice cookers varied so it may be different for yours (more or less). Pie is done when toothpick comes out with "clumps"
5. Once done, let the inner pot sit inside the rice cooker until it completely cools. Then refrigerate the pie for 4 hours or longer to set it. Remove and top with whatever you like!
OVEN BAKING:
Bake in a 9 inch pan, on the bottom rack, in a pre-heated oven of 350F (180C) for about 45-60 minutes. Ovens varied so check about 40 minutes and bake longer. If top is getting too brown, lightly cover with aluminum foil
