Elderberry Juice and Elderberries are a powerful herb for preventing a cold or flu and for shortening the duration of a cold or flu. In this recipe we first make a juice from dried elderberries and other herbs then we use gelatin to make fun gummy shapes. Kids of all ages will enjoy them!
Ingredients:
1/2 cup dried elderberries
1/3 cup dried rose hips
3 cinnamon sticks
2 Tablespoons licorice root or 5 star anise
1 teaspoon freshly ground pepper
3 cups of organic apple juice
1/2 cup local raw honey or other sweetener
2-3 tablespoons of gelatin
Make the Juice Place by placing elderberries and rose hips, star anise and cinnamon sticks in a mortar bowl and grind the herbs to break them open.
Then, transfer the mixture into a medium-sized sauce pan. Bring to a simmer and continue to simmer for 20-30 minutes.
Remove from heat and let cool, or place in an ice bath or refrigerator for quicker cooling. Strain into a bowl through a sieve topped with a muslin cloth or jelly bag. Squeeze well to extract the juice.
Allow juice to cool, then measure out 2 cups juice, add more apple juice if needed, to make 2 cups liquid, then add 2 1/2 to 3 tablespoons gelatin and whisk for 2 minutes until well blended.
Transfer the mixture to a medium-sized sauce pot and heat to simmer, stirring constantly, until it simmers.
Turn off heat and allow the mixture to cool again. Pour the mixture into bite-sized gelatin molds or a large glass casserole pan. Place in refrigerator until the gelatin firms up (about an hour).
Remove from refrigerator and using a knife, cut into small, teaspoon-sized cubes. Place the gummy cubes in a sealed container and store in refrigerator.
Take 1-2 gummies 2-3 times per day as needed.
