This savory pesto garlic bread is cheesy, soft and good for anytime. I used half finely milled wheat flour for a slightly healthier choice along with extra virgin olive oil. I love garlic so I piled on the garlic but skip it if you are not into garlic.
Pesto Garlic Bread Recipe | Easy Cheesy from Scratch | EASY RICE COOKER RECIPES
NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups
INGREDIENTS:
• 1 cup (150g) WHOLEMEAL FLOUR (finely milled whole wheat flour)
• 3/4 cup (110g) ALL PURPOSE FLOUR (bread flour)
• 1 1/2 tsp (6g) BAKING POWDER
• 1/2 tsp (2.5g) SALT
• 2 tbsp (24g) ALMOND SLIVERS (pine nuts)
• 3/4 cup (185ml) WARM WATER
• 1 tsp (5g) SUGAR
• 1 tbsp (15g) EXTRA VIRGIN OLIVE OIL
• 1 tsp (4g) DRIED YEAST
• 3 tbsp (5g) FINELY CHOPPED SWEET BASIL
• 1/4 cup (35g) PARMESAN (finely grated)
• 1 tbsp (15g) EXTRA VIRGIN OLIVE OIL (put into batter)
• 1 tbsp (15g) EXTRA VIRGIN OLIVE OIL (brush on flat dough)
• 1 cup (115g) SHREDDED CHEESE (cheddar/mozzarella)
• 5-6 large SLICED GARLIC CLOVES (optional)
HOW TO MAKE IT:
1. In a bowl, whisk together flours, baking powder, salt and almond slivers
2. In a small bowl, whisk together warm water, sugar, oil and yeast and let it sit for 10 minutes to proof
3. Finely chop the basil and set it aside
4. Pour the yeast mixture into the flour mix and fold until the dough forms. Knead it for about 3 minutes
5. Add chopped basil and parmesan cheese and knead to incorporate
6. Add olive oil and knead for about 5 minutes
7. Shape dough into a ball and place into a greased bowl. Cover tightly and let it proof in a warm area for 60 minutes
8. After dough has doubled, lightly grease flat surface and flatten dough into a 13in or 35cm circle
9. Brush olive oil on dough and sprinkle shredded cheese on top
10. Cut dough into 12 pizza slices
11. Place sliced garlic on top of each slice, if using
12. Roll each slice into a croissant shape
13. Place into a greased and lined pot, then cover and let it proof for another 30 minutes in a warm area
14. Brush additional olive oil on top and bake. Mine took 2 bake (60 min). Rice cooker varies so bake longer as needed
15. Cool 5-10 minutes and enjoy them WARM
OVEN BAKING:
Bake in greased and lined pan, in pre-heated oven of 375F (190C) for 30-40 minutes. Ovens varied so check about 25 minutes and bake longer as needed. Oven baked will have crispy and golden top
