INGREDIENTS :

Brownie Batter :
2 large eggs
200 grams sugar ( 1 cup )
50 grams plain flour ( 1/4 cup )
50 grams cocoa powder ( 1/4 cup )
100 grams melted butter ( 7 tablespoons )
1/8 teaspoon salt ( 0.75 grams )

Pecan Filling :
1 cup chopped pecans ( 150 grams )
1 cup golden syrup ( can use Maple / corn syrup ) ( 340 grams )
1/2 cup sugar ( 100 grams )
1/2 cup brown sugar ( 100 grams )
1 teaspoon vanilla extract ( 4.2 grams )
1/4 teaspoon salt ( 1.5 grams )
3 large eggs
2 tablespoons melted butter ( 28.35 grams )

INSTRUCTIONS :

.in a large mixing bowl add 2 large eggs & whisk
.add 200 grams sugar & whisk until fluffy
.add 50 grams plain flour, 50 grams cocoa powder
.add 1/8 teaspoon salt & mix well
.add 100 grams melted butter & mix well
.spray a baking dish with canola oil & layer with parchment paper
.pour in the brownie mixture & spread evenly
.bake in a preheated oven 180 c / 356 f for 20 to 25 minutes
.in a mixing bowl add 1/2 cup sugar, 1/2 cup brown sugar
.add 1/4 teaspoon salt, 3 large eggs & whisk well
.add 2 tablespoons melted butter, 1 teaspoon vanilla extract
.add 1 cup golden syrup & whisk well
.add 1 cup chopped pecans & mix well
.pour pecan mixture onto brownie & spread evenly
.place back in oven for 20 to 25 minutes
.leave to completely cool before cutting into slices
