Lemon-Tahini dressing great for autoimmune diets. One thing you might want to add to this recipe is a splash (1/2 - 1 teaspoon) of brown rice vinegar and/or champagne vinegar. That cuts the bitterness with a lovely tang (some people like bitter- but if it's too much, just add a bit of a high quality vinegar - apple cider, champagne, rice, etc). This stays covered in the fridge for a week. Great over raw or cooked veggies. Recipe: 1 clove garlic, 1 lemon, 2 TBSP EVOO, 2 TBSP water, 1/4 cup tahini (sesame seed butter), optional 1 tsp honey, 1/2 tsp salt, 1 tsp BodyBioPC or sunflower lecithin. Blitz in nutribullet or use immersion blender as in video. If you don't have the BodyBio PC or lecithin, it still works, it just may separate after a few days, so stir it up!
