Crawfish Monica is a contemporary Creole dish created by a New Orleans chef and named after his wife "Monica". It is a famous Jazz Fest dis where thousands of pounds are said to be served every year!

Ingredients:
1 lb- Crawfish tails
1/2 lb- Linguine
1/2 pint- Heavy cream
1 sm/med white onion
5- Scallions
4/6 cloves- Garlic
1/4 cup dry white wine
2 tbsn- fresh squeezed lemon
1/4 cup- chopped fresh parsley (we use cilantro)
1.5 tspn- Creole seasoning
(or your mix of paprika, cayenne,thyme, oregano, onion powder)
To taste- Parmesan, Salt, black pepper
