Kidney stew recipe: ~4 servings~ Ingredients: 2 Tbsp. Bacon grease 1 beef kidney prepared as above 1 onion diced 3 small-medium carrots thickly sliced (or if you want lower carbs substitute 2 cups cauliflower or cabbage) 1 tsp. Italian herbs 2 Tbsp. Soy sauce 2 Tbsp. Worcestershire sauce 2 Tbsp. Balsalmic vinegar ¼ cup Sherry cooking wine (optional) 1 ½ cups water
Melt bacon grease in Dutch oven. Saute onion until translucent, then add kidney. Brown kidney, then add remaining ingredients. Cover and place in 325o F oven for 1 1/2 -2 hours. Enjoy topped with full-fat sour cream!
