Epic Citrus Pie
I will warn you, this may ruin “store bought” lemon/citrus pies for you, and I won't be sorry about it either! Anyways, if you try this out for yourself, let me know what you think. As for me, I LOVE this pie, it's so delicious and actually tastes like lemon/lime, not something that might have been close to a lemon/lime at some point!
Other Options:: If you're not a fan of meringue, powdered sugar and/or whipped cream are lovely too!

Epic Citrus Pie
What You'll Need::
Graham Cracker Crust/Pie Shell – Extra Portion Size Recommended
3-5 Lemons – Depending on Size, Zested and Squeezed
1 Cup Splenda OR Sugar
¼ Cup Flour
4 Tablespoons Cornstarch
¼ teaspoon Salt
1 Cup Water
1 Cup Squeezed Lemon Juice – you can augment with “Real Lemon” or another brand of store bought bottled lemon juice.
3 Egg Yolks – Beaten
1 Tablespoon Butter
2 teaspoons of Lemon/Lime Zest - Mixed
¼ Cup Fresh Lime Juice – you can augment with “Real Lime” or another brand of store bought bottled lime juice.
3 Egg Whites
6 Tablespoons Sugar
In a non metal saucepan, combine the 1 cup Splenda/sugar, the flour, cornstarch, and salt. Stir in water and lemon juice. Cook and stir over medium heat until thickened and clear. Add a little hot mixture to the egg yolks, return all to the mixture. Cook 1 minute more, stirring constantly. Remove from heat, blend in butter, lemon/lime zest, and lime juice. Pour mixture into your Graham Cracker crust.
Optional:: Lick the pot/spoon clean of any leftover pie filling
Beat egg whites until soft peaks form. Gradually add the 6 Tablespoons sugar, beat to stiff peaks. Spread over hot filling. Bake at 425 Degrees for 5-8 minutes until brown.
*Tip: Put lemons/limes in the microwave for 10 seconds and roll hard on the counter to produce more juice.
