From Scratch Tortellini -stuffed with proscuitto & Portabella, with a fresh ragou of pork & beef

First try for tortellini. The trick is like all Italian food - it's poor people's food- very little actual substinace; a mouse's portion of scraps wrapped inside a dough of eggs( or water) and flour.
