Red Lentil pasta/collard greens salad 1 box lentil (8.8 oz) 1 bunch collard greens ( boiled and chopped) 1 inch piece ginger (sliced) 1 small box mushrooms 1/2 medium red bell pepper (sliced or diced) 3 sprigs of time (pull leaves from stalk) 1 cup parsley (chopped) Salt and cayenne pepper to taste Olive Oil for pasta
Method Pull collard leaves from stalk, roll a few leaves at a time and slice into strips. Place collards in pot with 8 cups of boiling water and sliced ginger. Cook for 5 minutes until tender. Strain and set aside. Boil pasta in large pot with 8 cups of water for 15-20 minutes. Strain and add oil to pasta to prevent sticking. Cover and set aside.
In a large skillet, saute bell peppers and mushrooms, Add thyme and parsley. Stir. Add collard greens and incorporate. Add pasta and mix in. Enjoy!!
