Here is a simple and easy keto-friendly mayonnaise recipe!
It is free from seed oils (such as soy, canola, and vegetable) and contains no sugar (unlike many commercial mayo brands).
Instead it uses light olive oil. Feel free to substitute avocado oil, or if you’re feeling really decadent, bacon grease :)
Note: if you do use bacon grease, it will solidify in the fridge. Just bring it up to room temp. for a bit before using, stick it in a warm water bath, or just spoon a dollop on top of a hot burger!
Easy Keto Mayo Recipe:
1 egg yolk (ideally fresh and pasture-raised, I used one from our chickens)
1 Tbsp Lemon juice
1 Tbsp Vinegar (I used apple cider)
1 Tbsp Dijon mustard
1 Cup light olive oil
Salt to taste
Instructions: Combine egg yolk, lemon juice, vinegar, and mustard in a blender or food processor. (This is the one I use and love: https://amzn.to/2IWnmGB). Turn on and slowly drizzle oil in. Scrape sides and add salt and voila! Homemade mayo! Remember to store in the fridge and consume within 5 days or so.

1) Fresh garlic
2) Pesto or fresh herbs
3) Horseradish
4) Chipotle peppers
5) Lemon zest
If you can’t possibly spare 3 minutes of your life to whip up some mayo, these four brands are keto-compliant (i.e. no seed oils, and very little if any sugar).
