This dish is inspired by a Chinese restaurant in Gillette Wyoming. The name of the restaurant was Hong Kong. My wife and I would go every chance we got. We would always order the Subgum pork chow mein. I have been trying to duplicate this dish for years. I think I finally nailed it.
During these hard time I am cooking food that is nostalgic for me. This dish conjured up some good memories for me and wifey.
