1 tablespoons salt, adjust according to your taste
2 thumb sized ginger, sliced unpeeled
1 red medium onion, peeled and sliced
6 cloves garlic, crush unpeeled
3 small long green chili, uncut
1 teaspoon whole peppercorn
2 dried bay leaves
4 tablespoons vinegar, coconut or cane
2 tablespoons fish sauce or soy sauce
2 tablespoons vegetable oil
4 tablespoons of water
sugar to taste or MSG if desired
