This recipe for spinach and artichoke stuffed chicken is perfect to satisfy your craving any night of the week. Spinach, artichokes, a mixture of cheeses and garlic come together to create the most flavorful filling that will get you out of your chicken rut. I love it because it’s a veggie and protein in one dish–can’t get much easier than that!

Things You’ll Need

3 Chicken Breasts
1/2 Cup Thawed and Drained Frozen Spinach
1/2 Cup Artichokes (from a jar), drained and roughly chopped
4 Oz. Softened Cream Cheese
1/4 Cup Mozzarella Cheese
1/4 Cup Grated Parmesan Cheese
1 Finely Minced Garlic Cloves
1 Tbsp. Salt
1 Tsp. Black Pepper
1 Tbsp. Olive Oil

INGREDIENTS

1 pound pork tenderloin (trimmed of fat), cut into 1/2-inch cubes
2 tablespoons cornstarch
1/3 cup water
1/4 cup rice vinegar
1/4 cup granulated white sugar
3 tablespoons ketchup
2 tablespoons low-sodium soy sauce
1 tablespoon canola oil
1 tablespoon peeled, minced fresh ginger
2 medium garlic cloves, minced
1 medium green bell pepper, seeded and cut into 1/2-inch pieces
One 8-ounce can pineapple chunks (in juice), drained and each chunk cut in half
steamed rice, for serving (optional)
chopped scallions, for garnish (optional)
