It has been about 4 hours since I started the dehydration process on three pounds of fat free, small curd, store brand cottage cheese and it is looking very nice. The whey is dried and the curds are almost dry. I tasted a couple chunks of the small curd and it was a bit leathery. I will leave the unit on until morning where I expect the curds to be crunchy.
