The isoelectric point is an important concept in many lab practices and brewing. What is it and why?

The isoelectric point is the very local pH of a molecule or more accurately the average pH of a molecule when you account for the different parts that make it up. This quickly becomes complicated with larger molecules. It is very relevant in bi-layer lipid cell walls, amino acids, DNA and more. Things where the immediate scenario can be simplified but is repeated many times over.

Large protein structures are an example of complicated isoelectric point. Structures where the negative charges are only facing inwards and the positive face outwards.

Protein folding is effected by this, DNA structure is effected, even cell walls and the proteins embedded there in are effected.

The isoelectric point is effected by local conditions such as acidic and basic solutions. Other factors that you may not know effect it include radiation and alcohol.
