Pumpkin Glutinous Rice Cake | Chinese New Year Dessert Ideas | EASY RICE COOKER CAKE RECIPES
NOTES:
* 1 cup = 250 ml
* Rice cooker capacity = 1 litre or 5 cups
* Rice cooker capacity = 1.8 litre or 10 cups

INGREDIENTS
DOUGH
• 2 tbsp (30g) BUTTER
• 1 tbsp (10g) RICE FLOUR (regular not glutinous)
• 1/2 cup (125ml) MILK (extra as needed)
• 2 cups (250g) GLUTINOUS RICE FLOUR (sweet rice flour)
• 1 cup (250g) PUMPKIN PUREE
• 2 tbsp (20g) BROWN SUGAR
SESAME SEED MIX COATING (optional)
• 1 tbsp (10g) WHITE SESAME SEEDS
• 1 tbsp (10g) BLACK SESAME SEEDS
FILLING (optional)
Red Bean Paste (can/bag)
Roasted Coconut Peanut
(also used to top yogurt, oatmeal and ice cream)
• 1/4 cup (65g) COCONUT SUGAR/PALM SUGAR (brown sugar)
• 1/4 cup (60ml) WATER
• 1/8 tsp PANDAN/VANILLA ESSENSE (optional)
• 1 cup (90g) SHREDDED COCONUT (desiccated coconut)
• 1/4 cup (35g) CHOPPED PEANUTS
• 1 tbsp (10g) WHITE SESAME SEEDS
HOW TO MAKE IT:
1. Make slurry by cooking butter, rice flour and milk until thick and creamy; transfer to mixing bowl
2. Add 1 cup of glutinous rice flour and mix until no more white flour
3. In a separate bowl, mix pumpkin and brown sugar until combined then add to flour mixture. Mix using your hands to completely incorporate
4. Add the second cup of glutinous rice flour and mix until well combined
5. Add more glutinous rice flour and/or milk until the dough can be shaped; or consistency of play dough
6. Divide the dough into equal pieces; I divided mine into 30g per piece
7. Roll each dough into a ball then flatten it, making sure the outsides a bit thinner
8. Fill dough with 1 tablespoon of your filling and fold the outside inward, pressing it slightly to close
9. Flatten it and pinch closed any cracks
10. Lightly rub on some oil and sprinkle on 1/4 teaspoon of sesame seed (1/8 teaspoon each side); pressing the seeds into the dough. Do this for each side. Complete filling the rest of the dough pieces
11. Grease and line your pot for easy removal. Fit in as many cakes as you can and bake 30 minutes. Turn over and bake 30 more minutes
12. Enjoy them warm!
OTHER BAKING OPTIONS:
1. Air fry each side at 350F (180C) for 8 minutes or less, depending on your air fryer
2. Pan fry on low heat with 1 teaspoon of oil, turning regularly until lightly brown
