This carrot cake use wheat flour and sugar substitutes (erythritol, monk fruit, stevia) to keep it healthy.

Healthy Carrot Cake Recipe from Scratch | Wheat Flour Carrot Cake Recipe Easy | RICE COOKER CAKES

INGREDIENTS:
• 1/2 cup (70g) WHITE WHEAT FLOUR (or all-purpose)
• 1/2 cup (75g) WHOLE WHEAT FLOUR
• 2 tbsp (15g) GROUND FLAX SEEDS
• 1 tsp (3g) GROUND CINNAMON
• 1/2 tsp BAKING POWDER
• 1/4 tsp BAKING SODA
• 1/4 tsp SALT
• 1/4 cup (30g) CHOPPED WALNUTS
• 2 EGGS
• 1/2 cup (100g) ERYTHRITOL SWEETENER (sugar subs)
• 1/3 cup (80ml) COCONUT OIL
• 1/3 cup (80ml) ALMOND MILK
• 1 tsp (4g) VANILLA EXTRACT
• 1 cup (130g) SHREDDED CARROTS (packed cup)
• 1/4 cup (65g) PUMPKIN PUREE

Yogurt Frosting (optional):
• 3/4 cup (200g) PLAIN GREEK YOGURT
• 1 tbsp CHOPPED WALNUTS

HOW TO:
1. If frosting with greek yogurt, drain the yogurt the night before or a few days in advance, in the refrigerator. You want as much liquid out as possible. I used coffee filters to drained mine
2. In a mixing bowl, combine flours, flax seed, cinnamon, baking powder, baking soda, salt and chopped walnut. Whisk to combine
3. In large mixing bowl, whisk together eggs, sugar substitute, milk, vanilla extract, shredded carrots and pumpkin puree to incorporate
4. Add flour mixture into the wet batter and whisk just to incorporate. Batter will be a bit runny but it's fine
5. Pour into lined pot, cover with paper towel and bake for 2 Bake Cycles, about 60 minutes. Rice cooker varies so check after 2 bake and bake longer as needed
6. If frosting, cool completely, about 1-2 hours. Frost with drained greek yogurt and top with additional chopped walnuts

OVEN BAKING:
Bake in pre-heat oven of 350F (180C) for 30-45 minutes. Ovens varied so check around 30 minutes and bake longer as needed

The flavor of this cake is light and nutty with a little bit of sweetness. I love the smell of roasted almonds in this cake. The chocolate and coffee is not overwhelming either, making this cake enjoyable any time of the day.

Chocolate Almond Coffee Cake from Scratch | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:
• 1 tbsp (5g) INSTANT BLACK COFFEE
• 1 tbsp (8g) COCOA POWDER
• 1/2 cup (125ml) HOT WATER
• 1 1/2 cup (210g) ALL PURPOSE FLOUR
• 2 tsp (8g) BAKING POWDER
• 1/4 tsp BAKING SODA
• 2 EGGS
• 1/2 cup (100g) SUGAR
• 3 tbsp (45g) OIL
• 1 tsp (5g) VANILLA EXTRACT
• 1 tbsp (15g) BUTTER (room temp soft)
• 1/4 cup (35g) CHOPPED ALMOND (add some into the batter as well)

TOPPINGS (optional):
• POWDERED SUGAR
• COCOA POWDER
• FRESH BERRIES
• CHOCOLATE/VANILLA ICE CREAM

HOW TO MAKE IT:
1. In a small cup or bowl, mix coffee, cocoa powder and hot water then set it a side
2. In a bowl, whisk flour, baking powder and baking soda to combined
3. In large mixing bowl, beat eggs and sugar for about 2 minutes. Then add oil and vanilla and mix to combine
4. Sift in the flour mixture, one half at a time, beating about 10-15 seconds with each add. Be sure to scrape the sides and bottom
5. Greased and lined your pot/pan with butter, going up about 2 inches (6 cm) high. Then sprinkle chopped almonds to coat the sides and bottom
6. Pour batter on top of the chopped almonds and cover with paper towel to catch condensation
7. Bake for 2 Bake Cycles (1 hour) then check. Rice cooker varies so bake longer as needed
8. Cool for 20-30 minutes before flipping it onto a serving tray. Enjoy as it or top with your favorite toppings

OVEN BAKING:
Bake in pre-heated oven of 350F (175C) for 35-45 minutes. Ovens varied so check around 35 minutes and bake longer as needed.

Mixed Berry Crumble Bars | Mixed Berry Crumble Pie | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:

Crust & Crumble:
• 1 1/2 cup (210g) ALL PURPOSE FLOUR
• 1/2 cup (100g) SUGAR
• 1/2 tsp (2.5g) BAKING POWDER
• 1/2 tsp (1.5g) GROUND CINNAMON
• 1/8 tsp SALT
• 1/2 cup (115g) UNSALTED BUTTER (room temp)
• 1 EGG (room temp)
• 1/2 tsp (2.5g) ALMOND EXTRACT
• 1/4 cup (35g) ALMOND SLIVERS

Filling:
• 2 cups (450g-550g) MIXED BERRIES (weight varied if frozen or fresh)
• 1/4 cup (50g) SUGAR
• 1 tbsp (8g) CORN STARCH

NOTES:
* Do not thaw frozen berries
* If using fresh mixed berries, weight will be less but use about 2 cups. If strawberries are large, cut them in half or quarters. Use raspberries and blueberries whole

HOW TO MAKE IT:
1. Whisk together flour, sugar, baking powder, salt and cinnamon until combined
2. Cut in the butter, using a spatula or your hand and mix until crumbly; try not to over mix it
3. Lightly beat egg and almond extract together then pour into batter; mix to incorporate
4. Toss in almond slivers or any chopped nuts your like
5. Lined with parchment paper or greased pot/pan with oil or butter; then press 2/3 of dough onto the bottom. Gently press, do not press hard or it will be tough
6. In a separate bowl, toss berries with sugar and corn starch until coated. Pour on top of crust and distribute evenly
7. Sprinkle remaining crumble over the berries
8. Bake for 3 cycles (1hr 30min). Rice cookers varies so check and bake if needed, baking longer
9. Cool for 20-30 minutes and serve warm or cold. YUM!

OVEN BAKING:
Bake in greased pan, in pre-heated oven of 375F (180C) for 30-45 minutes. Ovens varied so check around 30 minutes and baking longer as needed. Your crust and crumble will be more crispy than mine in the video

This super soft and moist Matcha Green Tea Cake is very good. The texture is somewhere between regular cake and sponge cake, or angel food cake. It's perfection! If you like matcha green tea, you'll love this cake.

Matcha Green Tea Cake in Rice Cooker | Matcha Cake | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:
• 1 1/2 cup (210g) CAKE FLOUR
• 2 tbsp (12g) MATCHA GREEN TEA POWDER
• 1 tbsp (10g) BAKING POWDER
• 1 tsp (6g) FINE SALT
• 1 cup (200g) FINE SUGAR (caster sugar)
• 4 EGG WHITES (small/med or 3 large)
• 4 EGG YOLKS (small/med or 3 large
• 2/3 cup (160ml) EVAPORATED MILK
• 1/3 cup (80ml) COCONUT OIL
• 1/4 cup (60ml) WATER
• 1 tsp (4g) VANILLA EXTRACT
• 1/4 tsp CREAM OF TARTAR (or white vinegar)
• 1/3 cup (75g) FINE SUGAR (caster sugar)

HOW TO:
1. Sift flour, green tea, baking powder, salt and sugar into a bowl and whisk to combine
2. In separate bowl, whisk egg yolks, milk, oil, water and vanilla extract until blended
3. In large mixing bowl with egg whites, add cream of tartar and mix for 1 minute then add the sugar in thirds, mixing about 1 minute between each add. Continue mixing until you get a stiff peak
4. Add egg yolk batter into flour mixture and whisk to blend, about 1 minute, until creamy
5. Add about 1 cup of whipped egg white into the batter and whisk to incorporate. Now gradually fold in egg whites with a spatula, going in one circular direction and cutting through the middle.
6. Pour into lined pot/pan, do not grease your pot/pan. Tap a few times to release bubbles. I tapped like 20 times
7. Bake for 4 Bake Cycles (2 hours) then check. Mine was 5 bake cycles ( 2 hrs 30 min). This was a pretty tall cake so it took longer to bake.
8. Cool for 30-40 minutes before removing from pot/pan. It will continue to bake as it cools
9. Enjoy as is or dust with matcha green tea powder or powdered sugar. Enjoy!

This easy one pot Chicken Tikka Masala requires no marinating or sautéing. Just throw everything into your pot and let it cook. That's my kind of cooking! My pressure cooker is electric but you can do this with stove top pressure cooker, instant pot or regular pot over stove top as well. Skinless and boneless DARK MEAT works better with this recipe. White meat is fine too but will have a different texture.

INGREDIENTS:
• 3 tbsp (50g) LIGHT OLIVE OIL (or vege oil)
• 3 lbs. (1360g) BONELESS SKINLESS CHICKEN TIGHS (cut into 1 in or 3 cm pieces)
• 4 tbsp (40g) MINCED/CHOPPED FRESH GARLIC (more/less to taste)
• 3 tbsp (30g) MINCED/GRATED FRESH GINGER (more/less to taste)
• 3 tbsp (15g) GARAM MASALA
• 1 tbsp (5g) GROUND TUMERIC
• 2 tbsp (15g) GROUND CUMIN
• 1 tbsp (10g) GROUND CORIANDER
• 2 tbsp (10g) RED CHILI POWDER (more/less to taste)
• 1 tbsp (5g) CAYENNE CHILI POWDER (more/less to taste)
• 1 tbsp (15g) SALT (more/less to taste)
• 1/2 cup (120g) PLAIN YOGURT (curd/greek yogurt)
• 2 cups (300g) CHOPPED RED ONION (2 med)
• 2 cups (454g) TOMATO SAUCE (two 8oz cans)
• 2 tbsp (30g) UNSALTED BUTTER
• 2 tbsp (30g) SOUR CREAM (curd)
• 3 tbsp (50g) HEAVY CREAM (half & half/coconut milk/evaporated milk)

GARNISH/TOPPING:
• FRESH CILANTRO LEAVES (optional)

HOW TO:
1. Add oil to the bottom of the pot
2. Add all ingredients up to tomato sauce into pot. Mix to combined
3. Cook for 30-45 minutes, depending on your method. Mine pressure cooker takes about 15 minutes to come to pressure so mine is actually cooking for about 30 minutes
4. Manual pressure release and stir. Cover lid loosely or put splatter guard on top and cook for 5-15 minutes to reduce the sauce to your liking. I like my sauce very thick
5. Add butter, sour and heavy cream then stir to mix
6. Taste and add adjust as needed. Let it sit for 5 minutes before serving
7. Top with fresh chopped cilantro leaves and serve with rice, rotis, parathas or naans

STOVE-TOP PRESSURE COOKER:
1. Cover and start with High heat until pressure locks lid (or until boiling)
2. Then low heat for 20-30 minutes and check for tenderness level
3. High heat with lid off to reduce sauce, stiring regularly. Stir in butter, sour cream and heavy cream

*NOTE: If using regular pot over stove top (not pressure cooker), you may need to stir every 5-10 minutes to prevent burning on the bottom

INSTANT POT:
1. Pressure Cook or Manual Pressure button with High Pressure for 7-10 minutes
2. Quick release and stir. Then Saute to reduce sauce to your liking, stirring regularly. Stir in butter, sour cream and heavy cream

*NOTE: Do not half the recipe or you may experience the "BURN" error. If you still get it, just add 1/2 cup of water then reduce it in the saute step

This mango cake is perfections! The mango puree, mango chunks and coconut flakes makes it tastes so tropical and delicious! It really doesn't get any better then this! Fresh fruit cakes are tricky so make sure you follow recipe and direction accordingly. Happy baking in your rice cooker!

Soft Moist Mango Cake Recipe from Scratch | Mango Cake from Scratch | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:
• 1/2 cup (145g) MANGO PUREE
• 1/2 cup (130g) MANGO CUBES (1 cm cubes)
• 1 cup (135g) CAKE FLOUR
• 2 tsp (6g) BAKING POWDER
• 1/4 tsp SALT
• 1/4 cup (63g) UNSALTED BUTTER (room temp or melted)
• 1/2 cup (100g) FINE SUGAR (caster sugar)
• 2 tbsp (28g) COCONUT OIL (vegetable oil)
• 1/2 tsp (2g) VANILLA EXTRACT
• 2 EGGS
• 1/2 tsp (2g) YELLOW FOOD COLOR (optional)
• 1/4 cup (25g) SHREDDED COCONUT FLAKES

TOPPING (optional):
• 1 tsp POWDER SUGAR (icing sugar)
• 1 to 2 cups CHOPPED MANGOES (on the side)

HOW TO:
1. Cube and puree the mango amount needed for the recipe
2. Sift flour, baking powder and salt into a bowl and mix well
3. Drop the mango cubes into the flour mixtures and shake the bowl to get all the mango cubes covered in flour then set it a side
4. In a large mixing bowl, beat together unsalted butter, sugar and oil for about 1 minute. Then add the vanilla extract and mango puree and beat for another minute.
5. Now add the eggs, one at a time, and beat about 1 minute with each egg until the batter is soft and creamy
6. Add the yellow food coloring if using and mix until well blended
7. Sift the flour mixture a second time, into the batter, but set the mango cubes aside. Fold in flour until almost blend then add the coconut flakes. Give a quick mix with the electric mixer to incorporate the coconut flakes well into the batter
8. IMPORTANT: Check your batter consistency at this point, comparing to what's in my video. If your batter is too running or wet? Then mix in 1 tablespoon of flour at a time, until you get the right consistency. Runny batter will make your cake too wet and dense.
9. Evenly spread the batter as much as possible into the rice cooker
10. Now, drop the flour coated mango cubes into the batter, evenly spacing them out. The cubes should be slightly below the batter but not completely to the bottom. Then lightly spread the batter over the mango cubes, making sure they are covered. See video for better visual
11. Bake for 3 cook cycles (1 hr 30 min), checking after the 2nd cycle. Or bake until tester comes out clean
12. Cool for 20-30 minutes and enjoy! Top with fresh chopped mangoes right before serving

OVEN BAKING:
Bake in pre-heated oven of 350F (175C) for 30-40 minutes. Ovens varied so check after 30 minutes and bake longer if needed.

This Mango Bread is healthy with whole wheat flour. You can make it eggless or vegan! It's crumbly but yet soft and moist. It has a texture almost like American corn bread. Make sure you choose ripe and sweet mangoes without a lot of vains for the best outcome. Happy Baking in your Rice Cooker!

Vegan Mango Bread Recipe with Whole Wheat Flour | No Egg Mango Bread

INGREDIENTS:
• 1 cup (275g) MANGO PUREE
• 1/2 cup (125g) MARGARINE/BUTTER, soft/melted (vegan margarine or coconut oil)
• 1/2 cup (135g/125ml) SWEENTENED CONDENSED MILK (vegan condensed milk)
• 1 tsp (4g) VANILLA EXTRACT
• 1 1/2 cup (225g) WHOLE WHEAT FLOUR
• 2 tsp (8g) BAKING POWDER
• 1/2 tsp (3g) SALT (omit if using salted butter)
• 1/4 cup (25g) SHREDDED COCONUT FLAKES
• 2-4 tbsp PURE SUGAR (optional-only as needed)

HOW TO:
1. In a mixing bowl, mix margarine/butter/oil and condensed milk until creamy then add mango puree and vanilla extract
2. In a separate bowl, sift flour, baking powder and salt then whisk to blend. Add to batter mixture and just do a quick mix to blend. NOTE: You can use all purpose flour but the cake will be a bit more dense. Also, you can use 1 cup (150g) of Whole Wheat Flour and 1/2 cup (75g) White Wheat Flour for a slight less crumbly texture
3. Now fold in the coconut flakes and mix to incorporate
4. IMPORTANT: Taste your batter for sweetness before proceeding. Depending on the sweetness of your mangoes, you may need to add additional sugar
5. Pour into lined pot/pan and bake for 3 BAKE Cycles (1 hr 30 min). Rice cookers varied so check after 2 cycles and bake longer if needed
6. Cool in the pot for 15-20 minutes before removing. Serve warm with butter or margarine. Yum!

OVEN BAKING:
Bake in lined pan in a pre-heated oven of 350F (180c) for 40-50 minutes. Ovens varied so check at 45 minutes and bake longer if needed

This lemon cake is full of lemony flavor and just the right amount of sweet and sour! The syrup and glaze really kick it up a notch! It's perfect with a steamy lemon tea!

You will need 1 large (or 2 small) lemon for this cake. If you are slightly short on lemon zest, don't worry about it. If you are slightly short on lemon juice, just add a bit of water. And if you don't have fresh lemon at all? Just skip the zest and use pre-packaged lemon juice. It will work just fine too.

Lemon Cake from Scratch without Buttermilk | Lemon Cake Recipe | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:
• 1 1/2 cup (210g) ALL PURPOSE FLOUR
• 1/4 tsp BAKING POWDER
• 1/4 tsp BAKING SODA
• 1/2 tsp (3g) FINE SALT
• 1/2 cup (120g) FINE SUGAR (caster sugar)
• 1/2 cup (125g) UNSALTED BUTTER (room temp)
• 2 LARGE EGGS (room temp)
• 1/3 cup (80ml) MILK (room temp)
• 2 tbsp (25g) LEMON JUICE
• 2 tsp (10g) LEMON ZEST (one lemon)
• 1/2 tsp (2g) VANILLA EXTRACT

SYRUP:
• 3 tbsp (40g) LEMON JUICE
• 3 tbsp (30g) FINE SUGAR

GLAZE:
• 1/4 cup (30g) POWDERED SUGAR (icing sugar)
• 1 tsp (7g) LEMON JUICE

HOW TO:
1. Sift flour, baking powder, baking soda and salt into a bowl and mix to combined
2. Beat sugar and room temperature unsalted butter for about 1-2 minutes, scraping the sides, until creamy
3. Add one egg at a time and mix for about 1 minute with each egg, until light in color
4. In a small bowl, mix milk (room temperature), lemon juice, lemon zest and vanilla extract and set aside
5. Add one third of the flour into the batter, do a quick mix, then add half of the milk and mix. Repeat with flour, mix, then milk and mix. Now add all the flour and mix until incorporate. Try not to overmix
6. Line or grease pan and bake for 2 COOK cycles (1 hr) then check. Mine was 3 COOK cycles (1 hr 30 min).
7. Cool for 10 minutes then remove onto a cooling rack or plate. Brush the sugar syrup all over the cake, making sure to get the sides as well. Let it completely cool, for another 30 minutes
8. Drizzle the sugar glaze on the cake and enjoy!

OVEN BAKING:
Bake in grease and flour pan(s) in a pre-heat oven of 350F (175C) for 45-60 minutes. Ovens varied so check around 45 minutes and bake longer if needed.

Healthy Banana Bread with No Sugar | Banana Bread with Wheat Flour | No Oven Cake Recipes

INGREDIENTS:
• 1 cup (140g) WHITE WHOLE WHEAT FLOUR (see notes)
• 3/4 cup (113g) WHOLE WHEAT FLOUR
• 1 tsp (4g) BAKING SODA
• 1/2 tsp (1.5g) GROUND CINNAMON
• 1/2 tsp (3g) FINE SALT
• 1 cup (260g) MASHED BANANA (about 4 med)
• 2 EGGS (see notes for no egg)
• 1/2 cup (125ml) COCONUT OIL
• 1/3 cup (80ml) HONEY
• 1/4 cup (60ml) GREEK YOGURT (or curd)
• 1 tsp (4g) VANILLA EXTRACT
• 1/2 cup (100g) SUGAR FREE DARK CHOCOLATE CHIPS (see notes)

HOW TO:
1. Mix flour, baking soda and cinnamon in a bowl
2. In large mixing bowl, mix eggs, coconut oil, honey, yogurt and vanilla for about 2 minutes
3. Fold in mashed bananas and mix to blend
4. Fold in dry flour mixture and chocolate chips then mix to incorporate
5. Bake in rice cooker for 3 COOK cycles (1.5 hr) or until toothpick comes out clean

NOTES:
• If you do not have white whole wheat flour, just use whole wheat
• For "no egg" substitution, mix 2 tablespoons of ground flax seeds plus 6 tablespoons of water and let it sit for 5-10 minutes before using it. Or, use one more mashed banana
• You can substitute with semi-sweet chocolate chips or any chopped nuts or dried fruits of your liking

OVEN BAKING:
Bake in pre-heated oven of 325F (160C) in grease pan for 30-40 minutes. Ovens varied so check after 30 minutes.

Have you eaten sweet potato cake? I've had a few and people will not believe this is sweet potato cake! The cream cheese frosting kick it above a notch! No need to pre-bake or steam your sweet potatoes; just use it raw. It's easy and super delicious!

Sweet Potato Cake with Cream Cheese Icing | Golden Sweet Potato Cake | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:
• 1 cup (140g) ALL PURPOSE FLOUR
• 1 tsp (3g) GROUND CINNAMON
• 1 tsp (3g) GROUND GINGER
• 1/4 tsp ALLSPICE
• 1/4 tsp SALT
• 1 tsp (4g) BAKING SODA
• 2 EGGS
• 1 cup (250ml) VEGETABLE OIL (I used coconut oil)
• 1 cup (200g) SUGAR (caster sugar)
• 1 tsp (4g) VANILLA EXTRACT
• 1 1/2 cup (225g) SHREDDED SWEET POTATO
• 1/2 cup (60g) FINE CHOPPED WALNUTS

FROSTING (optional):
• 1/2 cup (63g) UNSALTED BUTTER (room temp)
• 1/2 cup (113g) CREAM CHEESE (room temp)
• 1/2 cup (70g) POWDERED/ICING SUGAR
• 1/2 tsp VANILLA EXTRACT

HOW TO:
1. Combine flour, cinnamon, ginger, all spice salt and baking soday in a bowl and whisk until well combined
2. In large mixing bowl, mix eggs, oil, sugar and vanilla extract until light in color and creamy; about 2 minutes
3. Add half of the flour mixture into the batter and mix to blend. Then add the rest of the flour and mix until incorporate, scraping the sides to ensure everything is mixed. Watch video for batter consistency
4. Fold in shredded sweet potato and chopped walnuts and mix to combined
5. Lined pot with parchment paper and pour in batter. Cover with paper towel before closing
6. Bake for 3 COOK cycles (1 hour 30 minutes) then check. Baking time may vary so check after 2 cook cycles
7. Allow cake to cool completely, 60-90 minutes before frosting
7. Mix frosting ingredients together until well blended. Keep it cool until ready to use

OVEN BAKING:
Bake in pre-heat oven at 350F (177C) for 25 - 30 minutes. Ovens varied so check after 25 minutes and bake longer as needed.

This easy and super moist chocolate cake has the perfect mix of richness and chocolaty flavor. Double the chocolate additional chocolate chips or chunks. Triple the chocolate with a chocolate butter cream cheese frosting! Please see NOTES for substitutions and other tips.

How To Make Chocolate Cake at Home | Soft Double Chocolate Cake | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:
• 3/4 cup (105g) ALL PURPOSE FLOUR
• 1 cup (200g) FINE SUGAR (caster sugar, see notes)
• 1/2 cup (60g) COCOA POWDER (dutch processed)
• 1/2 tsp (2g) BAKING POWDER
• 1/2 tsp (2.5g) BAKING SODA
• 1/4 tsp SALT (omit if using salted butter)
• 1 tbsp (6g) INSTANT BLACK COFFEE (heaping spoon, see notes)
• 1/2 cup (115g) UNSALTED BUTTER (melted, see notes)
• 2 EGGS (slightly beaten, see notes)
• 2 tsp (8g) VANILLA EXTRACT
• 1/2 cup (125ml) HOT MILK (warm/hot but not boiling, see notes)
• 1/4 cup (60g or 2oz) CHOCOLATE CHIPS OR CHUNKS (optional, see notes)

CHOCOLATE BUTTER CREAM CHEESE FROSTING (optional):
• 4 oz (110g) CREAM CHEESE (room temp soft)
• 1/2 cup (115g) UNSALTED BUTTER (room temp soft)
• 1 tsp (4g) VANILLA EXTRACT
• 1/2 cup (60g) COCOA POWDER
• 2 cups (200g) POWDERED SUGAR (icing sugar)
• 2 tbsp (30g) MILK

NOTES & SUBSTITUTIONS:
• SUGAR: If using regular sugar, dissolved in hot milk instead of adding it to dry ingredients; can use cane sugar
• COFFEE: The coffee brings out the chocolate flavor but can be omitted. For a Mocha Cake, increase to 3 heaping tablespoons (18g)
• BUTTER/OIL: coconut oil or any vegetable oil
• EGGS: can substitute 1 medium/large mashed banana
• MILK: coconut milk or other vegan milk
• CHOCOLATE TOPPING: Do not overload the cake with chocolate topping. Too much will cause cake to be too wet and dense and may not cook properly.

HOW TO:
1. In a mixing bowl, combine flour, sugar (see NOTES), cocoa powder, baking powder, baking soda, salt and instant black coffee. Mix until well combined
2. Add melted butter, eggs and vanilla extract then mix slightly
3. IMPORTANT: Milk should be warm or hot to the touch; not boiling. If boiled, let it cool for 10-15 minutes before using. Hot milk will cause cake to be dense and wet. Add milk and mix about 1 minute. Batter will be runny
4. Pour into a lined pot/pan and sprinkle chocolate chips or chunks
5. Bake for 3 Bake Cycles (1 hr 30 min) then check. There will be clumpy batter on your tester but as long as it is not wet batter, then it is done
6. Cool for 20-30 minutes then remove from the pot/pan. Cool completely, if frosting, about 1-2 hours

FROSTING :
1. Beat cream cheese and butter until smooth, about 1 minute
2. Add the rest of the ingredients and fold with a spatula until most of the powder are gone. Now beat until smooth and creamy, about 2-3 minutes
3. If frosting has been chilled, let it sit in room temperature for 30 minutes before using

OVEN BAKING:
1. Grease and lined pan with parchment paper then coat with 1 tablespoon of flour, tap out excess
2. Bake in pre-heated oven of 325F (160c) for 40-50 minutes. Ovens varied so check around 35 minutes and bake longer as needed

Cardamon Almond Cake Recipe | Indian | Vegan | Eggless | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:
• 1 cup (250ml) COCONUT MILK (almond milk)
• 1 tbsp (13g) WHITE DISTILLED VINEGAR (lemon juice)
• 1 cup (140g) UNBLEACHED ALL PURPOSE FLOUR
• 1 tsp (4g) BAKING POWDER
• 1/2 tsp (2.5g) BAKING SODA (bicarbonated soda)
• 1/4 tsp FINE SALT
• 2 tbsp (12g) CORN STARCH (corn flour)
• 1 1/2 tsp (3g) GROUND CARDAMON
• 1/4 cup (30g) ALMOND FLOUR (ground almond)
• 1/2 cup (100g) PURE CANE SUGAR (brown sugar)
• 1/4 cup (60ml) COCONUT OIL (vege oil)
• 1/2 tsp (2g) VANILLA EXTRACT (almond extract)
• 1/2 cup (85g) RAISINS
• 2 tbsp (15g) CHOPPED PISTACHIO (or almond sliver/slices)

HOW TO:
1. In a small bowl, mix milk and vinegar and set a side
2. In a another bowl, sift flour, baking powder, baking soda, salt, corn starch, cardamon and almond flour and whisk to combined
3. In a large mixing bowl, whisk sugar, oil and vanilla extract for 1 minute. NOTE: if using larger sugar granules, add a bit of milk into the mixture and whisk until the sugar dissolved
4. Add half of the flour mixture into the sugar and half of the milk then whisk for 15 seconds. Add the rest of the flour and milk and whisk until incorporate; about 30 seconds
5. Add the raisins into the batter or sprinkling the raisins evenly on top after pouring the batter into the pot/pan. NOTE: I added the raisins into the batter and it sunk to the bottom. So, I think sprinkling them on top and pushing it down slightly might prevent all of them from sinking to the bottom
6. Lined pot/pan with parchment paper and pour in batter
7. Top with chopped pistachio or almond slivers or almond slices
8. Bake for 3 bake cycles (1 hr 30 min). Rice cookers varies so check after 2 bake cycles (1 hr) and bake longer if needed
9. Cool for 20-30 before cutting. You can also dust powdered sugar (icing sugar) on top if you like it sweeter

OVEN BAKING:
Bake in lined and greased pan in pre-heated oven of 350F (175C) for 30-45 minutes. Ovens varied so check around 30 minutes and bake longer if needed

I never thought using a chocolate box cake mix would make such great brownies! It really took me by surprise as I thought it would be 'cake like'. But it was really soft and gooey on the inside and chewy on the outside and bottom. So, perfect brownies!

Double Chocolate Brownies from Box Cake Mix | Vegan Brownies | RICE COOKER CAKE

INGREDIENTS:
• 1 15.25 oz box (432g) CHOCOLATE CAKE MIX (BETTY CROCKER SUPER MOIST CAKE MIX Devil's Food)
• 1/3 cup (80ml) COCONUT MILK (or any liquid milk)
• 1/4 cup (60ml) COCONUT OIL (or any veg oil)
• 1/3 CUP (85g) MASHED BANANA (or 1 egg)
• 1/2 cup (115g) DARK CHOCOLATE
• 1/2 cup (115g) WHITE CHOCOLATE
• 1 cup (220g) LARGE CHUNKY DARK CHOCOLATE (topping)

HOW TO:
1. Cut dark chocolate into chunks (if using chocolate bar), otherwise, can use chocolate chips as well
2. In mixing bowl, add cake mix, milk, oil and banana then mixed until combined
3. Add chocolates and mix to incorporate
4. Line pot or pan with parchment paper and flatten batter onto the bottom
5. Bake for 4 bake cycles (2 hours) and check. Bake for another cycle but immediately remove once the rice cooker goes into warm status
6. Let it cool for 10 minutes in the pot/pan then remove it to a cooling rack. Let it cool for 30-40 more minutes so it can set
7. Then enjoy the CHOCOLATE BLISS!

Bake in pre-heated oven of 350F (180C) for 30-40 minutes or until tester comes out clean. Ovens varied so check about 30 minutes and bake longer is needed

This blueberry orange cake combination is superb! It's loaded with fruits; exactly how I like my fruity cakes! You will love this one too! Don't skip out on the fruit fillings at the bottom, middle and top. The juice from the fruits help keep this cake moist and soft.

Blueberry Orange Upside Down Cake Recipe | Blueberry Cake | Orange Cake RICE COOKER CAKES

INGREDIENTS:
• 1 1/2 cup (210g) ALL PURPOSE FLOUR
• 1 1/2 tsp (7.5g) BAKING POWDER
• 1/2 tsp (3g) SALT
• 1/2 cup (125g) UNSALTED BUTTER (room temp)
• 1/2 cup (115g) WHITE SUGAR (caster sugar)
• 1/4 cup (40g) BROWN SUGAR (packed)
• 2 EGGS
• 1 tsp (4g) ORANGE EXTRACT (or vanilla extract)
• 1 tbsp (6g) ORANGE ZEST (packed)
• 1/3 cup (80ml) MILK (any liquid milk)
• 1/4 cup (63g) UNSALTED BUTTER (melted)
• 1/4 cup (40g) BROWN SUGAR (packed)
• 1 1/2 cup (220g) BLUEBERRIES (fresh or frozen)
• 1 ORANGE ROUND SLICED (see video)
• 1 cup (150g) BLUEBERRIES (fresh or frozen

HOW TO:
1. Sift flour, baking powder and salt together and whisk to combined
2. Beat room temperature butter for 1 minute, until creamy
3. Add the sugars and mix for 2 minutes, until light and creamy
4. Add the eggs, one at a time, mixing about 30 seconds between each egg
5. Add orange extract and orange zest, mix for 30 seconds
6. Remove the skin from the orange and slice it round (see video)
7. Fold the flour mixture into the wet batter in thirds, alternating with the milk; using a spatula
8. Line your pot or pan and pour the melted butter in it
9. Sprinkle the brown sugar all over the bottom, as evenly as possible
10. Add 1 1/2 cup (220g) of blueberries and spread it to cover the bottom
11. Add half of the batter, spreading evenly
12. Layer the orange slices on the batter
13. Now add all the batter, smoothing out the top
14. Sprinkle the remaining 1 cup (150g) of blueberries on top, evenly distributing and pressing them into the batter
15. Cover with s paper towel and bake for about 3 bake cycles (1 hr 30 min). Mine was 1 hr 40 minutes because the first bake actually stayed on COOK for 10 minutes due to the higher amount of liquid from the frozen blueberries. Check your cake after the third bake and bake longer if needed.
16. Let it cool in the pot for 5-10 minutes then invert it onto a plate. Let it cool in the plate for another 20-30 minutes before cutting. NOTE: if you prefer not to have it as upside-down? Just right side it up after inverting. It's actually beautiful right side up. Enjoy!

OVEN BAKING:
Bake in lined pan, in a pre-heated oven of 350F (175C) for 30-40 minutes. Ovens varied so check about 35 minutes and bake longer if needed.

So, I've never had a professionally made Banoffee Pie or Cake. But one of my viewer requested a Banoffee Cake with Banana, Coffee and Chocolate. So this is my first time making this cake. I hope it's almost like the real thing.

Banoffee Cake Recipe | Banana Coffee Chocolate | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:

CHOCOLATE SAUCE:
• 2 oz (57g) CHOCOLATE CHUNK/CHIPS
• 1 tbsp (15g) WHIPPING CREAM (or milk)
• 2 tbsp (25g) EXPRESSO COFFEE (or milk)

CAKE (smaller):
• 2 tbsp (25g) MILK
• 1/2 tsp (3g) LEMON JUICE
• 1/3 cup (85g) MASHED BANANAS (1 or 2)
• 1/2 tsp (3g) LEMON JUICE
• 3/4 cup (105g) ALL PURPOSE FLOOUR
• 1/4 tsp BAKING SODA
• 1/8 tsp SALT (a pinch)
• 1/2 tsp BAKING POWDER
• 1/4 tsp CINNAMON
• 1/4 cup (50g) FINE SUGAR
• 1/2 tsp VANILLA EXTRACT
• 2 tbsp (30g) OIL/BUTTER

WHIPPED CREAM:
• 1/2 cup (125ml) WHIPPING CREAM
• 2 tbsp (14g) POWDERED SUGAR (icing sugar)
• 1 or 2 SLICED BANANAS

LARGER CAKE:
• 1/4 cup (60ml) MILK
• 1 tsp (6g) LEMON JUICE
• 1/2 cup (130g) MASHED BANANAS (2 or 3)
• 1/2 tsp (3g) LEMON JUICE
• 1 1/4 cup (175g) ALL PURPOSE FLOOUR
• 1/2 tsp (2.5g) BAKING SODA
• 1 tsp (4g) BAKING POWDER
• 1/2 tsp (2g) GROUND CINNAMON
• 1/4 tsp SALT
• 1/2 cup (100g) FINE SUGAR
• 1 tsp (4g) VANILLA EXTRACT
• 1/4 cup (65g) UNSALTED BUTTER (melted)
• 1 EGG

HOW TO:
1. Heat chocolate coffee syrup ingredients in the microwave or stove top until hot then stir until chocolate completely melts. Set aside to cool. Sauce will be running but will thicken as it cools
2. In a large mixing bowl, combine milk and lemon juice. Whisk and let it sit for 10 minutes
3. In a small bowl, mashed bananas and measure out the amount needed. Add lemon juice and whisk to combine
4. Sift flour, baking soda, baking powder, cinnamon and salt into a bowl and whisk to combine
5. Add sugar, vanilla extract and oil to milk mixture and whisk until sugar is melted, about 1 minute or so
6. Add mashed banana and whisk to combined
7. Add the flour mixture and whisk until smooth, about 1 minute
8. Pour into lined pot then drizzle 2 tablespoons (3 tbsp for large cake) of chocolate sauce on top. Use a spoon handle or chopstick and slowly create tight "S" curves in the batter to distribute the chocolate sauce; touching the bottom the whole time
9. Cover with paper towel and bake for 2 cycles (1 hr) or 3 cycles (1 hr 30 min) for LARGE CAKE
10. Cool for 10 minutes then remove from pot. If adding whipped topping, cool completely for 1 hour
11. Beat whipping cream and powder sugar on medium speed until stiffen; about 3-5 minutes
12. Spread whipped cream on top of cake and top with sliced bananas. Drizzle the rest of the chocolate syrup on top. Enjoy!

OVEN BAKING:
Bake in lined and floured pan in pre-heated oven of 350F (175C) for 20-30 minutes for the smaller cake and 40-50 minutes for the larger cake. Ovens varied so check around 25/35 minutes and bake longer as needed

This cookie recipe is super easy and healthy! It's a bit chewy with a slight hint of sweetness. Add the chocolate chips or maple syrup for a little sweeter taste. Eat it any time without any guilt! Happy baking in your rice cooker!

5 Ingredients Easy Healthy Banana Oatmeal Cookies Recipe | No Egg | RICE COOKER CAKE RECIPES

INGREDIENTS:
• 3/4 cup (215g) MASHED BANANAS (3 med bananas)
• 1 cup (100g) RAISINS/CRANBERRIES
• 1/2 cup (60g) QUICK COOKING OATS (or grind rolled oats)
• 1/2 cup (50g) ROLLED OATS
• 1/2 cup (60g) CHOPPED WALNUTS
• 1/2 tsp (1.5g) GROUND CINNAMON
• 1/4 cup (50g) CHOCOLATE CHIPS (optional or 1 tbsp Maple Syrup)

HOW TO:
1. Add all ingredients into a mixing bowl and mix with until combined
2. Lined rice cooker with a long parchment paper
3. Shape cookies into a ball and flatten slightly; the cookies will not rise or expand so shape them to the size you want. You can just do a giant cookie as well
4. Bake the cookies in batches (unless making one giant cookie) for 2 bake cycles (1 hour). If making one large cookie, may need to bake for 3 bake cycles (1 hr 30 min)
5. Cool for 5-10 minutes and enjoy them warm

OVEN BAKING:
Bake on lined cookie sheet in pre-heated oven of 400F (200C) for 8-10 minutes.

No one will believe this superb and delicious coffee cake is from a rice cooker! It's light and crumbly with just the right amount of sweetness to pair with your favorite coffee or tea. Enjoy it! I did. I made two!

EASY RICE COOKER CAKE RECIPES: Cinnamon Crumble Cake | Cinnamon Streusel Coffee Cake | Tea Cake

INGREDIENTS:

CRUMBLE TOPPING:
• 1/4 cup (50g) WHITE SUGAR
• 1/8 tsp SALT
• 1 1/2 tsp (3g) GROUND CINNAMON
• 1/2 cup (70g) ALL PURPOSE FLOUR
• 2 tbsp (30g) UNSALTED BUTTER (melted)

FILLING:
• 1/4 cup (40g) BROWN SUGAR (packed)
• 2 tsp (5g) GROUND CINNAMON
• 1/2 tsp (1g) COCOA POWDER (packed; optional for color)

CAKE:
• 1/2 cup (100g) WHITE SUGAR
• 1/4 tsp SALT
• 2 tbsp (20g) BROWN SUGAR
• 1 tsp (4g) BAKING POWDER
• 1 tsp (4g) VANILLA EXTRACT
• 4 tbsp (60g) UNSALTED BUTTER (room temp)
• 1 EGG (room temp)
• 1/3 cup (80ml) MILK (room temp)
• 3 tbsp (45g) SOUR CREAM (plain yogurt/curd, room temp)
• 1 cup (140g) ALL PURPOSE FLOUR

HOW TO:
1. Make sure these ingredients are at room temperature: milk, sour cream, butter and egg. Measure the amount needed and let them sit at room temperature for about 1 hour
2. In a bowl, mix the crumble topping ingredients together then set aside
3. In another bowl, mix the filling ingredients together then set aside
4. In a large mixing bowl, beat sugars, baking powder, vanilla extract and until until combined, about 1-2 minutes
5. Add the egg and beat for 1 minute or until white color
6. Add sour cream into the milk and whisk until smooth
7. Add the flour and milk, in thirds, into the batter, gently mixing between each add. Batter will be thick, creamy and airy
8. Line or oil and flour your pot or pan. Pour half of the batter in and spread it onto the bottom as much as possible
9. Sprinkle the filling mixture evenly on top, shake and tap to distribute as needed
10. Add all the batter and spread evenly over the filling
11. Top with the crumble topping, distributing evenly. Put a swirl to break up the filing line in the middle, if you want to. It's optional
12. Cover with a paper towel and bake for 2 -3 Bake Cycles (1 hr 30 min). Rice cooker varies so check at 2 bake cycles and bake longer if needed
13. Cool completely, about 40-60 minutes before cutting. If you like it sweeter, drizzle on a sugar glaze (1 cup icing sugar + 1 tbsp milk)

OVEN BAKING:
Bake in a greased and floured a 9 in. pan, in pre-heated oven of 350F (175C) for 50-60 minutes. Ovens varied so check around 50 minutes and bake longer as needed

Puto is the Filipino name for this cake. But other Asian countries eat this same cake as well. Each has it's own name but in general, it's a steamed rice cake. I tried the recipe with cake flour and it was too dry and densed. An all rice flour is the traditional recipe and was very good; but quiet sticky. My version is a texture in between the two. 2. Add water and whisk until batter is smooth, about 2 minutes. Add green food coloring, if using, and mix to incorporate. Set it a side
3. Cook rice slurry, until thick and creamy over medium flame or in rice cooker. Add it to the batter and whisk until smooth, about 1 minute or so. Taste your batter. If you want it sweeter or add more tea, then add it before baking. Batter will be thick but still drizzle easily, like honey or syrup
4. Add baking powder and instant dry yeast and mix to combined, about 1 minute
5. Cover tightly and set it in a warm place to proof for about 90 minutes. Batter is ready when you see bubbles and bumps on the top
6. Stir the batter well, to remove most of the bubbles then pour into greased pot/pan/molds. Typically, this cake is steamed but you can bake it in the rice cooker also
7. Bake for 2 to 3 bake cycles (about 90 minutes). Rice cooker varies so check after 2 bake and bake longer if needed

STEAMING:
• You can steam for 15-20 minutes, depending on the size of your molds, over medium flame
• For my rice cooker steaming, I added 1 cup (250ml) of water and let it boiled first, then it steamed for 20 minutes before the water evaporated and my rice cooker turned off. The cake was perfect

I've never heard of or eaten grape cake before; until a viewer mentioned it. I have to say, I was very surprised at how good this was. This cake tasted like blueberry cake! It could be the type of grapes I used... but that's what it tasted like to me.

EASY RICE COOKER CAKE RECIPES: Grape Cake Recipe Without Oven | Grape Pound Cake

INGREDIENTS:
• 1 1/4 cup (160g) ALL PURPOSE FLOUR
• 1 tsp (5g) BAKING POWDER
• 1/3 cup (75g) UNSALTED BUTTER (room temp)
• 1/2 cup (100g) WHITE SUGAR
• 2 EGGS
• 1/2 cup (120g) SOUR CREAM
• 3 tbsp (40g) LIGHT OLIVE OIL
• 1/4 cup (60ml) WATER (room temp)
• 2 cups (350g) SEEDLESS WHOLE RED GRAPES (washed & dried)

NOTES:
Use only firm sweet whole grapes. Make sure to remove any soft ones. If your grape is not sweet or tasty, your cake may not taste good either.

HOW TO:
1. Whisk flour and baking powder together
2. Mix butter and sugar until light and creamy, about 1 minute
3. Add one egg at a time and mix about 1 minute between each egg
4. Add sour cream, oil and mix for 30 seconds
5. Sift in the flour and mix for 30 seconds
6. Add water, half at a time and mix about 1 minute
7. Lined pot and add half the grapes on the bottom
8. Add the batter evenly on the grapes
9. Layer the other half of the grapes on top
10. Bake for 3 bake cycles (1 hr 30 min). Rice cooker varies so check after and bake longer if needed
11. Cool for 20-30 before removing and cutting

OVEN BAKING:
Bake in lined and greased pan in pre-heated oven of 350F (175C) for 40-50 minutes. Ovens varied so check about 35 minutes and bake longer as needed

This banana bread is divine! So soft and moist and really good with the chopped nuts and brown sugar topping. Be sure your pineapples are sweet and tasty for the best bread ever!

Banana Pineapple Bread Recipe With Nuts From Scratch | Banana Cake | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:
• 1 1/2 cup (210g) BREAD FLOUR
• 1/2 tsp (3g) SALT
• 1 tsp (3g) GROUND CINNAMON
• 1/2 tsp (3g) BAKING SODA
• 1/2 cup (100g) PURE CANE SUGAR
• 1/2 cup (125ml) CANOLA OIL (vege oil)
• 2 EGGS
• 1 tsp (5g) VANILLA FLAVOR
• 1 cup (250g) MASHED BANANAS (about 2-3)
• 1/2 cup (135g) CRUSHED PINEAPPLES (drained)
• 1/2 cup (60g) CHOPPED PECANS
• 2 tbsp (20g) BROWN SUGAR (1 tbsp for less sweet)

HOW TO MAKE IT:
1. In a bowl, whisk flour, salt, ground cinnamon and baking soda until combined; about 30 seconds
2. If using fresh pineapples or larger pieces, chopped into smaller size. Drain it and gently press or squeeze out as much juice as possible. Also, mash your bananas
3. In a large mixing bowl, beat together sugar, oil, eggs and vanilla for about 2 minutes; until light in color
4. Fold in the mashed bananas and pineapples just until combined
5. Add the dry flour mixture and fold until almost all the white flours are gone. The add the chopped nuts and fold until incorporated. Do not over mix it
6. Pour into lined pot/pan then top with brown sugar. I highly recommend this because it definitely transform this bread; for me anyway
7. Bake for 3 BAKE CYCLES ( 90 min) then check. Rice cooker varies so bake longer as needed
8. Cool for about 20-30 minutes and ENJOY!

OVEN BAKING:
Bake in greased pan (lined also if desire) in pre-heated oven of 350F (175C) for 40-50 minutes. Ovens varied so check around 45 minutes and bake longer as needed

EASY RICE COOKER CAKE RECIPES: Healthy Carrot Cake Oatmeal Cookies | No Sugar | No Eggs

INGREDIENTS:
• 1 cup (110g) ROLLED OATS
• 1/2 cup (85g) WHOLE WHEAT FLOUR
• 1/4 cup (35g) WHITE WHEAT FLOUR (hard wheat flour)
• 1 1/2 tsp (6g) BAKING POWDER
• 1 1/2 tsp (4g) GROUND CINNAMON
• 1/8 tsp SALT
• 2 tbsp (30g) COCONUT OIL
• 1/2 cup (125ml/165g) MAPLE SYRUP
• 1 tsp (5g) VANILLA EXTRACT
• 1 FLAXSEED EGG (1 tbsp (8g) GROUND FLAXSEEDS + 3 tbsp (45g) WATER)
• 1 cup (135g) GRATED CARROTS (well packed)

HOW TO MAKE IT:
1. Make the flaxseed egg to allow time to set. In a small bowl, add the ground flaxseed and water then stir and set it a side. Also grate your carrot and measure out the amount
2. In a bowl, add oats, flour, baking powder, cinnamon and salt then whisk to combine
3. In a large mixing bowl, add coconut oil, maple syrup and vanilla extract; whisk until well incorporated, about 30 seconds. Add the flax egg and do a quick whishk, about 15 seconds
4. Add the dry ingredients and fold together with a spatula just until combined, about 30-40 seconds. Add the shredded carrots and fold together for 30 seconds
5. Cover with plastic wrap, press closely to the batter, then chill it for 30 minutes or longer. This will harden the dough to make it easier to shape
6. After 30 minutes or longer, lined your pot/cookie sheet with parchment paper. Shape the dough into round balls (whatever size you want) then flatten it slightly down
7. For rice cooker, bake for 2 BAKE Cycles (1 hr)

AIR FRYER:
Bake at 325F (160F) for 8 minutes then turn it over and bake 8 minutes on the other side

OVEN BAKING:
Bake in pre-heated oven of 325F (160C) for 15-25 minutes, depending on the size of your cookies

This updated version, hopefully, will turn out better for most of you. I made one last year but it came out densed for a few people that tried it. I changed the preparation steps and updated the correct measurements along with getting actual video footages this time around. I'm sorry it took a while to update this recipe but I could not find good oranges for most of the year. I made this twice using the recipe and both times, came out perfect. Please do give a try.

EASY RICE COOKER CAKE RECIPES: Mandarin Orange Cake Recipe from Scratch with Butter Cream Frosting

INGREDIENTS:
• 1 1/4 cup (290g) MANDARIN ORANGE PUREE (5-7 oranges)
• 1 1/2 cup (210g) CAKE FLOUR
• 2 tsp (8g) BAKING POWDER
• 1/2 tsp (4g) BAKING SODA
• 1/2 cup (115g) UNSALTED BUTTER (room temp)
• 1/2 cup (100g) FINE SUGAR (caster sugar)
• 2 EGGS
• 1 tsp (4g) VANILLA EXTRACT
• ONLY AS NEEDED 2 tbsp (30g) MILK (if batter is too thick)

BUTTER CREAM FROSTING (optional):
• 1 cup (230g) UNSALTED BUTTER (room temp soft)
• 1 cup (150g) POWDER SUGAR (icing sugar, packed)
• 3/4 cup (215g) PINEAPPLE PUREE (drained well)
• 1/2 cup (25g) SHREDDED COCONUT (desiccated coconut)

TOPPINGS (optional):
• 1/2 cup (25g) SHREDDED COCONUT
• Mandarin orange slices

HOW TO MAKE IT:
1. Puree mandarin oranges and measure amount needed. I used 5 oranges, slightly smaller than a tennis ball
2. In a bowl, combine flour, baking powder and baking soda and whisk to combined
3. In a large mixing bowl, beat soft butter and sugar until light in color, abut 2 minutes
4. Add the eggs, one at a time, beating about 1 minute with each egg
5. Then add vanilla flavor and beat for 15 seconds. Now add the orange puree and beat until incorporated, about another minute
6. Sift in half your dry mixture and beat about 15 seconds. Scrape the sides and bottom as needed. Sift in the rest and beat another 15 seconds. Do not over mix. Your batter should be light, airy and about the consistency of whipped cream. If your batter is too thick? Add one tablespoon of milk at a time, beating about 15 seconds, to get the correct consistency. If your batter is too runny, add one tablespoon of flour to get the correct consistency. Check my batter in the video for visual reference
7. If your pot is not non-stick, grease and lined your pot with baking paper then carefully pour batter in. Put a paper towel or napkin on top to catch condensation
8. Bake for 3 COOK cycles (about 90 min) and check. Cake is done when toothpick comes out clean
9. Cool for 30 minutes before cutting. If frosting, cool for 1 hour or longer

FROSTING:
1. Puree the pineapple and drain it. I used a 565g can (1 pound or 20 ounce can) sliced pineapple. First drained then puree; then drain again
2. Beat the soft butter until creamy, about 2 minutes. Add powder sugar and beat to combined, about 30 seconds
3. Add pineapple and shredded coconut and mix well. Taste your frosting, add more sugar if you want it sweeter
4. When cake is completely cool, frost your cake. Decorate with slices of oranges and additional coconuts. Enjoy!

OVEN BAKING:

This angel food cake is perfect and so easy to make! It's definitely like the ones sold in the grocery stores. Be sure to sift your flour, at least twice or more for a more softer cake. The almond extract will really help to minimize the possible egg smell and egg taste so don't skip it. Since the recipe only used the egg whites, use the yolks in an egg tart recipe or cook with other eggs for breakfast.

Angel Food Cake Recipe Easy | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:
• 1/2 cup (70g) CAKE FLOUR
• 2 tbsp (30g) FINE SUGAR (caster sugar)
• 6 EGG WHITES (around 210g)
• 1/2 tsp CREAM OF TARTAR
• 1/8 tsp FINE SALT
• 1/8 tsp ALMOND EXTRACT
• 1/2 tsp VANILLA EXTRACT
• 3 tbsp (45g) FINE SUGAR (2 tbsp for less sweet)

HOW TO MAKE IT:
1. Sift flour and sugar into a bowl and mix to combined
2. In a large bowl, beat egg whites for 30 seconds then add cream of tartar; beat for 30 seconds
3. Add salt, almond extract and vanilla extract and beat for another 30 seconds
4. Add one tablespoon of sugar at of the time; beating 30 seconds in between each, until you added all the sugar. Beat until you get soft peak; about 4-5 minutes total
5. Sift half the flour mixture into the batter and slowly fold in one direction with a spatula; scraping sides and bottom, cutting through the middle. This took me 2 minutes and 30 seconds. Sift in the rest of the flour and fold until there's no more dry flour lumps; about another 2 minutes and 30 seconds
6. Do not grease your pot/pan as this cake needs to stick to the sides to rise. You can lined the bottom with parchment paper if you want
7. Bake for 2 Bake Cycles (60 min) and check. Tester should come out clean. Rice cooker varies so bake longer if needed
8. Cool for 5 minutes then turn it upside-down and cool for another 15-20 minutes more before cutting
9. Use a spatula to loosen the cake from the sides. If you did not use parchment paper on the bottom, use your hand to gentley pull the cake off the bottom. Enjoy as is or top with your favorite fruits and whipped cream

OVEN BAKING:
Bake in pre-heated oven of 375F (185C) for 25-35 minutes. Ovens varied so check around 25 minutes and bake longer if needed

Steamed Savory Pumpkin Cake Recipe | Kim Koy Kee Recipe | Chinese Steamed Pumpkin Kuih

INGREDIENTS:
Base Batter:
• 1 cup (120g) RICE FLOUR (not glutinous rice flour)
• 2 tbsp (20g) TAPIOCA STARCH
• 1 tbsp (10g) CORN STARCH
• 1 1/2 cup (375ml) WATER (room temp)

Filling:
• 1 cup (185g) GRATED PUMPKIN
• 1 tbsp (10g) CHOPPED GARLIC
• 1/2 tsp (5g) CHICKEN BOUILLON GRANULES
• 1/2 tsp (3g) SALT
• 1/4 tsp GROUND BLACK PEPPER
• 1 tbsp (15g) OIL
• 3/4 cup (100g) IMITATION CRAB MEAT

Top Slurry (optional):
• 2 tbsp (20g) RICE FLOUR
• 2 tbsp (20g) TAPIOCA STARCH
• 1/8 tsp SALT
• 1 cup (250ml) HOT WATER

Topping/Garnishes:
• Chopped Green Onion
• Sliced Red Pepper
• Garlic Oil
• Sesame Oil

HOW TO MAKE IT:
1. Prepare most of the filling ingredients and have proper amount measured and ready because once we start cooking, it will go pretty fast. Grate the pumpkin to get required amount, chop crab meat, chop garlic, measure salt, black pepper and chicken bouillon granules and set them aside. Greased and lined your baking pot or pan and set it aside
2. Mix your base batter and set it aside
3. Cook the filling in the rice cooker or over stove top. Add oil to pot/pan and turn on heat until oil is hot
4. Add garlic and fry until fragrant, about 1 minute
5. Add grated pumpkin, salt, black pepper and chicken bouillon granules. Stir fry for about 2 minutes
6. Add crab meat and stir fry until pumpkin is almost cooked, about 1 minute and 30 seconds
7. Whisk the prepare base batter and add it to the filling mix. Stir until thicken, about 2-3 minutes then remove from heat
8. Scoop mixture into greased and lined pot/pan, pressing and spread evenly onto the bottom
9. If adding top slurry, then whisk the ingredients together until smooth or until most of the lumps are gone. Pour on top and evenly distribute the batter. This is strictly for aesthetic and is optional
10. Cover with paper towel and bake for 1 to 2 bake cycles. Rice cooker varies so check after 1 bake. Keep in mind, everything is pretty much cooked. I baked mine for 2 bake cycles (1 hr)
11. Cool 15 minutes (if not using top slurry) before cutting. If used top slurry then cool until the top is set; about 30 minutes. Serve with toppings of your choice

STEAM BAKING:
1. Make sure the water is boiling and steamed for 10 minutes; then top the slurry; if using
2. Steam for another 15-20 minutes

EASY RICE COOKER CAKE RECIPES: Moist Milo Cake With Milo Ganache Without Oven

INGREDIENTS:
• 3 tbsp (38g) SUGAR (white or brown)
• 1/2 cup (125g) UNSALTED BUTTER (room temp/melted)
• 3 EGGS
• 1 cup (125g) MILO POWDER MIX
• 1 cup (140g) ALL PURPOSE FLOUR
• 1 tsp (3g) BAKING POWDER
• 1/2 cup (125ml) MILK (any liquid milk)

MILO GANACHE (optional):
• 3 tbsp (24g) MILO POWDER MIX
• 2 tbsp (20g) POWDERED SUGAR (icing sugar)
• 1 tbsp (10g) MILK

HOW TO:
1. Whisk or beat sugar and butter together until creamy and light, about 1 to 2 minutes
2. Mix in one egg at a time, alternating with Milo powder mix, in thirds. Mix about 30 seconds with each egg and each Milo addition. Once all eggs and Milo powder has been added, mix for another minute. Batter should be creamy and not too thick
3. Sift in flour and baking powder then quickly whisk for 15 seconds
4. Add milk and whisk until incorporated, about 30 seconds
5. Pour into lined pot and cover with paper towel or strong napkin to catch condensation
6. Bake for 2 bake cycles (1 hour) and check. Mine was 3 bake cycles (1hr 30 minutes). Rice cooker varied so check after the 2nd bake cycle
7. Cool for 20-30 minutes before cutting
8. For the ganache, mix all ingredients in a small bowl with a spoon and drizzle it over the entire cake or per slice. Enjoy!
