One of the best things Mexico shared with the world is it's cuisine. Today we are making Huevos Rancheros a healthy and straightforward breakfast or lunch. Vegetarian too! The recipe is fairly accessible to beginners and a great balanced meal. There is a great textural combination in this dish between the crunchy tortillas and the soft eggs and salsa. The flavour is super interesting as the vegetables for the salsa are charred so a smokey or caramelised component is imparted into the flavour profile. Highly recommended!
