I recently watched Harry Soo (https://www.youtube.com/channel/UC4dtbTXdvjo272b5x_mxRBw) smoke a whole packer beef brisket in about 5-6 hrs. on a Weber Smokey Mountain smoker using his "Hot and Fast Method" and I was intrigued and decided I wanted to give it a go on Betty Lou my large stick burner to see what kind of results I might get. I had a couple of challenges but I managed to make it through and I think the results will speak for themselves. I hope you like the video!
