Ok. My first time trying sweet potato chocolate cake and it is soooooo GOOOD! And the frosting ... I can eat it without the cake! I feel it's best to use orange sweet potato. But if you can't find them? The yellow sweet potato would be the next options. And you can easily make this vegan by using a few vegan ingredients.

Sweet Potato Chocolate Cake Recipe From Scratch | with Chocolate Frosting | EASY RICE COOKER CAKES
NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups
* Please READ Important TIPS at the end of each video
INGREDIENTS:
Cake
• 3/4 cup (180g) MASHED POTATO (prefer orange sweet potato)
• 1/2 cup (125ml) WATER (drinking water)
• 1/4 cup (85g) HONEY (maple syrup)
• 1 tbsp (15g) BALSAMIC VINEGAR (white vinegar)
• 1 tsp (6g) VANILLA EXTRACT
• 1 cup (140g) ALL PURPOSE FLOUR (pastry wheat flour)
• 1/4 cup (40g) BROWN SUGAR (cane sugar)
• 1/4 cup (45g) MINI CHOCOLATE CHIPS (semi-sweet)
• 1 tsp (5g) BAKING SODA
• 2 tsp (8g) BAKING POWDER
• 1/2 tsp (2g) SALT
• 1/4 cup (25g) COCOA POWDER
• 1 tbsp (15g) WATER (drinking water)
Frosting
*** Note: video has larger quantity & it was too much for 1 cake. Below quantity is good for 1 cake ***
• 1/2 cup (130g) MASHED POTATO (prefer orange sweet potato)
• 1/4 cup (40g) BROWN SUGAR (cane sugar)
• 1/4 cup (25g) COCOA POWDER
• 1/4 cup (70g) PEANUT BUTTER (almond/cashew butter)
• 1/2 tsp (3g) VANILLA EXTRACT
• 3-4 tbsp (45g-60g) ALMOND MILK (soy milk)
HOW TO MAKE IT:
1. Clean and cook your sweet potatoes. You can boil or steam them
2. Using a blender, smoothie maker or food processor, blend the first five ingredients until smooth
3. Whisk together the dry ingredients until incorporated
4. Pour the wet mixture into the dry ingredients. Rinse out the rest of the wet mixture with the one tablespoon of water and empty it into the batter
5. Fold the batter until combined; do not overmix
6. Pour batter into lined pot/pan. Smooth out the top and tap a few times to distribute the batter
7. Bake for 2 bake cycles then check. Rice cookers varies so bake longer as needed
8. Cool completely, about 2 hours, if frosting
9. Beat frosting ingredients until smooth. Start with 3 tablespoons of milk and add one tablespoon at a time as needed for a frosting consistency
OVEN BAKING:
Bake in a greased and lined pan, in pre-heated oven of 350F (180C) for 25-40 minutes. Ovens varied so check about 25 minutes & bake longer as needed
