A delicious Chicken Bake with rice to soak up all the flavours !
You'll need :
250g Rice
3 tablespoons olive oil
Black Pepper / salt
1/2 teaspoon Chilli flakes
1/2 teaspoon Smoked Paprika
1 teaspoon Dried Oregano
1/4 teaspoon Ground Cumin
2 tablespoons tomato puree
2 onions, peeled and quartered
6 garlic cloves, peeled and bashed
8 chicken thighs
3/4 Bay Leaves
2/3 tomatoes, halved and thickly sliced
1/2 lemon, thinly sliced
600ml Chicken Stock
1 sprinkle of chopped fresh parsley
