Vegan Pho making at home

One of my top 5 favorite Asian cuisines is the Vietnamese #Pho (besides Malaysian Tempeh Laksa, Hakka Thunder Tea Rice aka Ancient Herbal Veg Grain Bowl, Japanese buckwheat soba and Natto), which can be found around the world in Asian restaurants as well. I have tried several versions of vegetarian/ #vegan #pho and tried to make special request if possible for my soup to be free from any bullion cubes or msg. Often times, soup broth becomes plain when flavor enhancers were left out.

To satisfy myself, though this might not taste like restaurant's food, I decided to go ahead and make own vegan version of Pho with whatever ingredients I like--- diy vegetable soup broth, homegrown garden herbs and vegetables as well as home sprouted mung beans. I am happy with the result and enjoyed my own simple Pho 🍲. Pease forgive me if you are a Pho specialist and feel this is not traditionally authentic enough. :)
