✅ Ingredients:
• potato – 2,6 lb | 1,2 kg
• onion – 5 oz | 150 g
• 3 eggs
• salt – 1 tsp
• ground black pepper – ½ tsp
• olive oil – 3 tbsp or more if you need
✔︎ You will need:
• baking dish - 10 in | 26 cm
• oven
• fine or coarse grater
• colander
• deep bowl
📙 Preparation:
1. Grate the potato coarsely and the onion - finely. Lay into the colander fixed on a deep bowl or stockpot. Spoon the vegetables to drain extra liquid.
2. Whisk the eggs, salt and ground black pepper until stiff and add the grated potato and onion, 1 tbsp of olive oil and mix well.
3. Brush the baking dish with 1 tbsp of olive oil and put the prepared stuff in it, smooth and cover evenly with 1 tbsp of olive oil.
4. Preheat oven to 350°F | 180°C and bake the potato kugel for 50 minutes.
5. Serve the kugel hot with sour cream or greek yogurt, greens and vegetables.
❗️Advices:
1. You can use Yukon Gold, Klondike Goldust or Russet potatoes. Or other gold varieties of potatoes.
2. For serving, you can prepare a sour cream sauce. Finely chop greens (parsley, coriander, scallions, basil), mince garlic, and mix them into low-fat sour cream or greek yogurt. Season with salt and pepper to taste.
