Garlic mustard is an invasive species that was brought over to North America by European settlers at the turn of the 19th century. Foraging for garlic mustard not only helps the native plant species in affected areas, but it's fun to play with culinary-wise. Today I'll be urban foraging for garlic mustard in my backyard and making a garlic mustard pesto and horseradish.

1/2 cucumber, sliced
2 tomatoes, sliced or diced
1 avocado, sliced
1 carrot, shredded
vinaigrette
salt and pepper

Vinaigrette Ingredients:
1/2 shallot, minced
1oz red wine vinegar
3oz avocado oil
1 tsp honey
1 tsp dijon mustard
pinch of parsley
pinch of savoury
salt and pepper to taste

2 tbsp chives/green onions/shallots
1 tbsp sesame seeds

The Vinaigrette:
1oz sesame oil
2oz avocado oil
1oz rice vinegar
3/4 tsp shoyu (tamari)
salt + pepper to taste

Cracking open a coconut for the first time is quite the experience, that's for sure. I didn't really know how to crack open a coconut, but when my husband gifted me with a fresh coconut, I had no choice but to learn! I know this isn't the best method for cracking open a coconut, but it got the job done!
